I've recently discovered the joys of making simple soups by combining different veggies and herbs and stock in a pot, simmering and blending. Last night it was cauliflower, broccoli, onions, garlic and lots of fresh dill. Does anyone else have simple veggie soup combos (and herbs) to share?

I make a minestrone type vegetable soup - I saute fennel seeds with my onion, celery, garlic then add veggies like cauliflower, green beans, chopped kale, carrots, peas, tomatoes, zucchini (or whatever I have), season with basil and a little oregano. Add some cooked beans and pasta at end.
