I find it really helpful and inspiring to post what I am eating and to read what others are eating as well. I tend to get into food ruts and, while, I want to try new things, it's difficult to think of *what* I want exactly.

So I was thinkin' we could have a weekly where we can post what we're eating every day or even once a week, whenever. Jump in if you wanna.

I totally agree---it's great to get ideas from others:

Breakfast: roobios tea, mixed grain porridge with flax oil and maple syrup

Snack: organic strawberries (yuuuuuuummmmmmm)

Lunch: roasted cauliflower, split pea soup

Dinner: corn on the cob, green beans with garlic, soy sauce, and sesame oil,
brown rice with miso gravy

Snack: organic banana and water with lemon

OH---and probably a big fat chai latte at some point!!!!

Alright. Although yesterday was not the best.

Brekkie: Apple walnut scone and a devilled egg (I was at work)
Lunch: egg salad sandwich with roasted tofu and veggie salad
Snack: Roasted caulifower and sweet potato salad
Dinner: We were at a party and so I shared a plate of food with dd and ds, guac and chips, veggie burger, pineapple, bean salad

Oh, and I had lots and lots and lots of alcohol, at least for me (my mom came to the party and left early with dc)

Today is chicken and corn tortilla soup.

Later in the week, I’m thinking of:
Pesto-roasted potatoes, sautéed with red bell peppers, mushrooms, spinach, zucchini, and onion, and sprinkled with a little feta cheese.

I’m too lazy to make Spanikopita (and not a big phyllo fan), but I’ll make a spinach, mushroom and feta pie with regular pie pastry on top.

Shrimp fried rice.

Lentil soup with Italian sausage and mustard greens. Yummmm.....

Honey-garlic-ginger-chili-soy chicken if the weather stays cool, cold tuna tri-color pasta salad with cucumber and red bell pepper if it gets hot outside.

Also, planning to make sour lemon bars....
