Can you substitute spelt/rye/soy flour for wheat/white in baking one for one? Or do you have to do anything special to it? I want to make cinnamon rolls but can't use whear flour for some of the family. Any thoughts?
You'd have to add gluten if you didn't use white or wheat flour. I've never done it, so I can't give you any further information about the amounts or anything. There are lots of people who can't handle wheat, so there are probably websites with some recipes you could try.
