I hope it's not too late, you might wanna try this out--

4 cups old-fashioned rolled oats
1 cup sweetened, shredded coconut
1 cup unsweetened, shredded coconut
2 cups sliced almonds (or chop them up if you prefer)
3/4 cup vegetable oil
1/2 cup good honey
1 1/2 cups small diced dried apricots
1 cup small-diced dried figs
1 cup dried cranberries
1 cup dried papaya, diced
1 cup roasted, unssalted cashews

Preheat oven to 350 degrees.
Toss oats, coconut & almonds together in large bowl. Whisk oil and honey in another small bowl & then pour over the oat mixture, and mix well until everything is coated with the oil. Pour onto 13 by 18 inch baking sheet (the bigger the better, actually). Bake, stirring from time to time with spatula, until mixture is a nice, even golden brown, which will be abt 45 minutes.
Remove granola from oven and allow to cool, stirring from time to time (oats will darken). Add dried fruits and cashews.
Store in airtight container.
Makes 12 cups.

Have fun!

Bestbirths- thanks for the new recipe- I will give it a try.

Earth- your recipe is awesome. I gave it as gifts, and we ate it at home. Everyone loved it- and Eli loved helping to make it.

Thanks again,
jeanie

Laurel's kitchen has the best granola recipe...super granola or something like that. The toasted, ground sesame seeds make it really tasty ad healthy too!
