So I just spent an obscene amount of $ at the market, and have not more energy left to plan a meal for tonight. I usually make dinner around mid day and then warm/cook it at 6 when the kids have no patience for me being in the kitchen.

Last night I made

Cassarole of :
Brown rice with garlic and onion
Tamari and Seasame seed baked Tofu on the rice
Melted white chedder on top of the whole thing

rolls

green beans with garlic, almonds, wine and olive oil

tangerines on the side

( the west nile is bad down here, so garlic on everything!!)




Ideas for tonight, or make me jealous cooking mamas!

It would help if you told us what you bought at the store! We're having leftovers, so that won't help you for tonight (especially since the meat (and it sounds like you may not eat meat) took about 18 hours to smoke over the weekend).

Oh my husband loves smoked meats. But alas, we are a vegetarian household. My hubby eats meat out, but that is about it.

I guess I am just looking for quickie cassarole and kid meals
( vegetarian) but I aways like know what eveyone else is eating for dinner because it can spark some ideas!

So with my leftovers and purchases I did red potatoes and carrots in the crock pot with caper , wine and basil and then heated up some Boca Chik patties!

Tonight I'm making (sorry we're not vegitarians here...)

chicken sauted with red peppers and a little butter and garlic/season salt
Plain ol' white rice
and some sort of canned veggie

Its simple night tonight, since Dh is in class til 10pm and I don't wanna cook any big thing that late...

I made a soup by sauteeing onions and carrots in a little olive oil, added some spike and tamari, about a half a cup of pumpkin puree I had in the freezer, lots of water, a can of organic navy beans, and some frozen lima beans and chopped collards. I let this simmer a while on the stove and added salt and white miso right before serving. Doesn't sound that great, but tasted good. We ate the whole pot. Even the boys ate it w/o complaining.

Tonight??? I need inspiration. Keep the ideas flowing.

I think tonight will have to be comfort food. My girls don't seem like they feel well.

I am thinking about soups or warm cereals. Maybe some tomato soup, I will add some basil from the yard, some spiral noodles, lotsa sea salt for our throats and bake some bread.
I make a good good beer bread with fresh sage.

wow, I just inspired myself! Thanks for the soup hint!!
