Hm. I love eating the sugar-soaked dried ones plain (the truth comes out!), but I can't imagine having an enormous case of plain, tough, shoe-leather ones! Perhaps you could reconstitute them in water (or a flavored liquid) and use them in quick breads, or to make mango chutney or pickle? Actually, one of the latter two might be a good idea - it's so time-consuming to cut up mangoes by hand for that purpose. And it's lovely to have jars of homemade spicy chutney around for Indian meals, to jazz up pork roasts (if you're a carnivore), etc.
