Need ideas! Mom gave me a whole case of mac. apples! Yum. I am thinking of making pie and freezing it - only if I can find a wheat-free pie crust, though. If nothing else, I will juice them and freeze that. Anyone got some great recipies??

Apple butter is great and easy to make. You can even do it in the crockpot.
Crisp is simple=- we've been having it for breakfast. Just cut some butter into oats, a little brown sugar, cinnamon, and salt and nutmeg, and sprinkle over thinly sliced apples. Bake.

Mom to 5 wonderful kids (9, 6, 4, 2 and 0), 1 adopted through foster care.

: I was going to sugest a crisp to. It's easier to do wheat free than pie crust. You could just cut up the apples and freeze them. Put them on a towel on a cookie sheet so they don't stick together in a lump. Put them in a bag when they are firm.

Here's some yummy ones:

Apple Salad
Ingredients
2 apples, diced and unpared
1/2 cup diced celery
1/4 cup raisins
1 tablespoon lemon juice
1 tablespoon reduced-calorie mayonnaise
lettuce leaves (optional)

Instructions
Combine all ingredients except lettuce; mix well. Refrigerate until served. Serve on lettuce leaves, if desired.
Yield: 8 servings


Sauteed Apples
"This is great for any meal, but is great for breakfast. The syrup from the apples is great on homemade waffles. You may add raisins to the sauce if you wish."
4 servings.

2 tablespoons butter
2 large apples - peeled, cored and sliced 1/4 inch thick
1 teaspoon cornstarch
1/4 cup cold water
1/4 cup brown sugar
1/4 teaspoon ground cinnamon

1 In a large skillet or saucepan, melt butter over medium heat; add apples. Cook, stirring constantly, until apples are almost tender, about 6 to 7 minutes.
2 Dissolve cornstarch in water; add to skillet. Stir in brown sugar and cinnamon. Boil for 2 minutes, stirring occasionally. Remove from heat and serve warm.
Makes 4 servings

Sweet Potato and Apple Muffins

1 3/4 cups all-purpose flour (can use WW)
1 1/2 tsp. baking powder
1 tsp. cinnamon
3 tbsp. canola oil
3/4 cup light brown sugar
1 egg
1 egg white
1 (15-oz) can sweet potatoes (yams), drained and mashed or 1 cup fresh sweet potatoes, cooked and mashed
1/2 cup skim milk
1 3/4 cups chopped, peeled baking apples

Preheat oven to 400 degrees. In a bowl, mix together the flour, baking powder and cinnamon; set aside. In another bowl, mix together oil, brown sugar, egg, egg white, mashed yams and milk. Make a well in the center of the dry ingredients and add yam mixture, stirring until moistened. Do not over mix. Fold in the apples. Spoon batter into paper-lined or coated muffin tins, filling about three-fourths full. Bake for 20 to 25 minutes or until done. Makes approximately 1 1/2 dozen muffins.

I agree, this is the best time if year! So much good food going around! I was also given a large bunch of beets yesterday - beet/carrot juice here I come!

Thanks for the recipies. I am excited about the apple yam muffins. I'm sure they would work with Spelt flour...

allrecipes.com or foodtv.com both have great recipes for apple butter and homemade applesauce! I'm so jealous. . .
