Here I am procastinating at MDC instead of getting dinner ready. This is definitely one of those nights when I wouldn't bother if I didn't have kids.

We are having tacos - salsa, homemade refried beans, cheese, tomatoes, beans in tomato sauce for the kids, lettuce, stir fried peppers and onions. Should be ready in about 20 minutes. We'll have apples for dessert.

Mmm! Can I come to your house for dinner? It sounds delicious! I'm going to make a BLT salad using a smokey tempeh instead of bacon and fresh, home grown garden tomatoes, and some gorgonzola, all topped with an avacado-based dressing. I'll toast up some sesame bagels and add some fresh raw veggies and fruit. All on the table in 20 minutes.

We had tacos last night. Always good around here. Dd is still trying to get the hang of eating them without everything falling out, though.
Tonight I've got a white bean and barley soup in the cp and we'll be having a big ol salad with that. I've got a ton of cucs from my CSA and also some other veggies that need to be used up as we're getting another box tonight.

mmm, white chicken chili is my FAV. ALthouhg, i use the recipe from the Whole Foods Market cookbook.

I can't decide yet. Either kale, with beer battered sole fillets, and potatoes, or bourbon cheddar veggie/chicken pot pie with spelt crust. I might do the bourbon cheddar pot pie.

Due with number 5 in August. We do all that crunchy stuff.

The only reason we're having apples for dessert instead of cookies is that I can wash, cut and core apples in less than a minute with only a knife to wash - cookies are way too much work for me tonight

Used to be that dh only felt satisfied with tacos that contained some sort of meat, now the beans and veggies satisfy him. Yaaayyyyy!!!

Tomorrow I think I'll do something in the crockpot. It is supposed to be a lot cooler, so I'll have to think of something to make with mashed potatoes - the kids will love those.

Tonight is my "free meal night"...I saved back the broth and leftover veggies from a roast last week in the freezer, threw any little bit of extra veggies each night into the container....voila! Veggie soup tonight (along with corn muffins).

Last night was salmon patties, noodles/mixed veggies tossed together.

Night before was chicken fajitas.

Chicken sausage stir fried with red peppers, mushrooms, and onions over brown rice. With a side of sliced tomatoes from the garden. Now I'm hungry, lol.

I tried to make bubble & squeak tonight for the first time...it didn't hold together too well because the veggies I used were too big (cut up brocolli, diced peppers) but it was still DS had some cucumbers on the side and to drink we had hot cocoa

Today is Friday so it is pizza night. Pepperoni and cheese for the kids and I usually make 2 or 3 different ones for dh and I - he eats the leftovers for lunch. I think I will make one with tomatoes, garlic and fresh basil and one with lots of peppers and carmelized onions and a little goat cheese.

We'll make either apple crisp or pumpkin gingerbread cake for dessert.

Shanti-Your my kinda gal! In general, Friday night is pizza night around here. And DH and I LOVE the goat cheese and carmelized onions on one. I end up making two fairly big pies. And I use whatever I have on hand. Always one plain. And then the other one I will do something interesting for DH and me. I made roasted veggies last night, and we have leftovers. And I love this prior to pizza night. I chop up whatever is leftover and throw on all or part of one of the pies. We always have leftover pizza. And DH eats it for lunch the next day, or if we have a lot leftover, we have it for dinner the next night with some other leftovers.

For all you mamas who make pizza dough, I've been finding lately that my dough seems to do better when I make it the night before and then put it in the fridge. Another little tasty tip: I add tarragon to my dough. Just a bit, but it gives the crust a lovely, sort of sweet taste. Yummm...

Anyone have a good suggestion for their favorite vegan baking book? We are not vegan, but I make a lot of vegan or just dairy-free things. I'm acrtually off to make my favorie vegan chocolate cake from one of the Moosewood cookbooks! Yummm.

: Although I *wanted* to share my pizza thing, I did not intend to go off on my vegan baking tangent. My poor, addled brain got confused and I thought I was on the veggie mamas thread. But if anyone does have a suggestion let me know. Or come on over to the other thread and share!

Sandwiches with leftover sliced grilled chicken breast, garden tomatoes, basil, and herbed goat cheese on focaccia. Also served with a side of black and small white salad (heavy on the garlic).

Another Friday Pizza Night here. Has been for about 15 years.

This morning my 6 yr old dd looked at her big calendar where she keeps track of days, set the velcro number on, and yelled "Oh, wow! It's Pizza Night" Not Firday, not the last day of the month, but Pizza Night! lol

I used to make it, but now we do take out. It's the only night of the week i don't cook supper.
