We are having roast chicken - I just took a 7.3 pound organic free range chicken out of the freezer. I will make same acorn squash and maple glazed carrots with it. We have some potato bread I baked the other day and I will getthe kids to make a salad. We will finish off with apple crisp with the apples we picked last weekend. Oh yeah - I think I still have some dressing in the freezer leftover from Thanksgiving (Canadian) I could heat up too.

As it is, my husband is in florida, his mom died, so we are doing take out. Maybe Del Taco?
We always do a "world tour" of foods when hubby is away because he hates every kind of ethinc food!

I would LOVE to do this, but there aren't any ethnic restaurants here ... hence the homemade Thai Chicken Curry for dinner. For some reason, North Dakotans seem to have an aversion to ethnic food.
When I was pregnant with DD, DH took a road trip that brought him home through Minneapolis ... I told him not to come home without some gobi aloo and lamb korma.

Stew in the crockpot now. DD wants to make biscuits later to go with and will help with a salad and making a dressing.
Just got done making a new cookie recipe off the bag of the Heath toffee chips with oatmeal and coconut...so yummy! I think it will be a new cookie fav!
I am making tomato soup! We got a LOT of organic tomatoes and peppers yesterday (farm day at our CSA farm), so I will be cooking up a huge pot with onion, tomato, garlic, basil, peppers, maybe throw in some pureed spinach. Heat up a baguette, and MMM!!
we tried something new off the couscous box.... chix with asparagus, rosemary, lemon and white wine over cous cous... and i made carrots too... not our thing, ok, but too much lemon
tonight we are having dirty risotto with a caesar salad... we might have baked apples and ice cream for dessert, but DH has a cold so we might not. dirty risotto is my kind of comfort food, though, so i'm looking foward to it even if we don't have dessert.
the recipe for dirty risotto is on the food network site if anyone wants it.
