mac-n-cheese (yep, boxed), pizza (memorized all delivery numbers ), burritos, breakfast stuff (eggs and toast,biscuits and gravy) We have "fallback" dinners quite often. Like tonight. I'm about to go hook us up with some boxed mac-n-cheese and some good ol' frozen chickn patties. But hey, I'll throw in a vegetable for color

Newman's jarred spagetti sauce, whole wheat pasta w/salad.

bean burritos w/ canned beans, ww tortillas, lettuce, tomato, salsa.

tostados, corn tortillas crisped up in the oven w/canned beans and veggies on top

veggie burgers or nuggets, frozen fries (alexies brand?) w/salad

homemade macaroni and yeasty cheese w/broccoli and a salad

Tofu (breaded and baked) w/ broccoli or peas or green beans and a salad

Most of our meals are actually pretty quick but for the most part healthy.

OUR DAUGHTERS ARE PROTECTED SHOULDN'T OUR SONS BE TOO! :

We have fall back dinners almost every night. :

Usually some pasta boxed mix that I add stuff to, bean burritoes, or veggie/boca sausage stew.

Ahh, I fondly remmeber the days of suburban living and take-out, or *gasp* delivery!

For emergency nights here, it's brown rice and black bean burritos, made with a can of those diced tomatoes with jalapenos. I always have salsa, etc.

Sloppy Joes. You can just brown burger and add ketchup and some seasonings and let it simmer. Kids love it.

Pasta and dried tomato pesto. I dried a ton of tomatoes from the garden. I grind up 5 or 6 slices per serving, with a small handfull of walnuts, a clove of garlic. Add olive oil and parm cheese. All done, no cooking. Serve over HOT pasta with a garden salad. Tastes like you worked hard!

Quiche. Frozen pie crust, 6 eggs beaten lightly, tomatoes and summer squash or zuke and cheddar, or spinach and mushroom with feta and onion.

Real oatmeal with raisins and brown sugar and walnuts and cinnamon.

Tacos. I just cook the lump of frozen burger. I keep the shells on hand, always have salsa and cheese. Sour crm makes it a party! (And I don't buy that nasty mix. I cook the burger, drain if ness, add can of tomatoes with chiles, simmer for a while)

Soemtimes I do frozen burgers and dogs. I just book 'em frozen, they're fine.





And let's fess up now. How about..........cereal? WHo hasn't given the kiddos a bowl of cereal on a really bad night?

OK well I'll be honest here. (Not sayin anything about you mamas who say homemade lasagna and garlic bread is your fall back dinner.)



But our REAL fall back dinner, as in, we just got home, it's past dinnertime and the kids are starving, is cottage cheese served with TLC crackers and apple wedges. But that is seriously fall back.

My next level fall back supper is for when I don't feel like cooking but I have at least a little bit of time. In this case I make frozen Amy's pizzas - 2 or 3 different ones - and then mix up the slices so everyone gets a variety (we usually do the spinach one, the broccoli and tomato one, and the no-cheese one which is really yummy believe it or not). Pretty healthy and who doesn't love pizza. We call it "Mix It Up Pizza Night" and it's actually a really big hit - everyone loves it.

If it's just me and my kids, then I'll fix pancakes. Dh doesn't like them. Sometimes he'll go for french toast, though. I like to make it with raisin bread and put a little orange juice in the egg batter.

ugh. : packaged "parmesan" flavor couscous and a HUGE pile of steamed broccoli (2-3 BIG bunches) which feeds me, DH and DS. at least the broccoli is good...but that packaged couscous is soooooo yummy!!!!!!!!!!

We have clean out the fridge night. For example, last night we got home late, everyone was hungry. Dd had leftover burrito, ds had leftover burrito and taco, I had tomato soup and bread with a green salad and bottled dressing, and dh had leftover pizza with some tomato soup. Leftovers rock for last minute eating.
If we've got nothing to go from, it's usually macaroni and cheese (organic, but from a box) with frozen peas or pb&j or even just cereal.

I loooove cous cous. I especially like the big grain style. I will soak a few sun dried tomatoes in hot water for about 5 minutes and throw them in with the cous cous. Add a little nutritional yeast and steam some frozen veggies. Mmmmm.... Brings me back to the days when I could eat cheese.

my "morning" sickness has been stretching into the early evening so we are doing a lot of fall back dinners too! DH is a good cook, but when he has been at work all day and I have been puking and chasing a toddler all day...

pancakes
pasta & newman's own or frozen homemade sauce
beans & rice
or take out

I've also started making some lasagnas & casseroles on the weekends and putting them in the freezer so we don't always have to do much at dinner time, but can still have a good meal.

nachos are wonderful and quick - I just throw chips on the plate and cover them with seasoned black beans, diced green peppers, shredded spinach, diced tomatoe, shredded cheese, salsa, sour cream and wow! you have protein, veggies, loads of salt, a little dairy and lots of smiles!

Our fall back dinner is Sambar -

cook some red lentils with whatever veggies (broccoli, carrots, celery, onion, bok choi, tomatoes, etc.) all in a pot with water til lentils are done (seriously only a few minutes for red lentils. Then add some sambar spice mix (indian spices) and some tamarind.

This works great because it is only one pot, I can adjust the veggies to whatever I have on hand, and I can adjust the amount of veggies I put in depending on how much time ds gives me to chop .

We also do fried rice if we have leftover rice but that is rare.

DH's fall back meal is a frittata.

My first fallback dinner would be leftovers - we usually have something in the fridge.

2nd choice would be some frozen leftovers - I freeze the stuff we don't get to in a day.

3rd choice - pasta with butter and cheese, and some sliced ham. Or pasta carbonara.
