I get so discouraged using beans when they take hours to get to the state where you can actually add them to a recipe. Basically what I want to do is boil the beans, like a ton at once, and then freeze them in portion sizes so I can just grab them from the freezer when I am making a bean recipe.

Is this bad for the flavor/texture of the beans?

If you have any specifics on boiling/freezing
black beans
pinto beans
black-eyed peas

or any other types that are good.

I cook beans in quanity, usually in the crockpot and then freeze them in smaller portions all the time. I generally do pintos, black beans or chick peas, but imagine it would work about the same with all beans. Just stop cooking them while they are on the firmer side of done--don't let them get mushy, because they will soften a little on freezing and reheating.

I've done that with kidney beans and it worked great. I couldn't tell that they had been frozen at all. I plan to do it more, but we keep eating all the beans before I get a chance to freeze them! We LOVE beans. I also want freeze some garbanzo's and then have we can have 'instant' hummus. YUM.

I usually get good freezer bags and double bag them....I hate freezer burn!

Another question about beans. I cooked up some dry black beans last week. Are they still ok (safe) to eat? How long will they last cooked in the fridge? Is it too late to freeze them?

Once they're cooked, I think you're supposed to only keep them for about 3 days in the fridge.
