Just seeing if anyone has a good applesauce cake recipe. I want the applesauce to be the only sweetner if possible. Dairy is fine. If you have a recipe that calls for sugar or honey maybe it could be repaced with something else???

this one's from allergy coobook by gioannini

1 (10.5 oz) firm silken tofu
1 cup applesauce
1/3 cup oil
1/3 cup sweetener (I prefer brown rice syrup)
2 tbsp lemon juice (optional)
1 cup pitted dates or dried figs
1 cup kamut or spelt flour (or just whole wheat)
1 cup barley or light buckwheat flour (or additional wheat)
2 tbsp garbanzo orsoy flour
2tbsp carob powder
1 1/2 tsp baking soda (or 2tsp bakng powder if lemon is omittd)
1 tsp cinnamon
1/2 tsp salt
1/2 cup chopped pecans

Drain tofu between layers of paper towls for 10 min. the preheat oven to 350 and grease and flour 2 8-inch round layer pans or a 9*13 inch pan. Blend tofu, oil, sweetener, aplesauce and juice until smooth. Add dates or figs and blend enough to chop friut. Mix flours, cinnamon, salt, baking soda, carob and nuts. then add liquid ingredients and mix quickly but throughly. Put into pan and bake about 50 min.
