I love to cook and I often enjoy the ides I read here (esp. in the what's for dinner threads). So, what's your current favorite(s) for veggie dinners?

I've currently been eating black beans over rice almost every day! I just cook some black beans in my pressure cooker and when they're done I throw in a can of diced tomatoes, various spices, 1/2 an onion and cook it for a while. I also make the brown rice in a pressure cooker, it's very easy and comes out great. Very cheap too. I buy the rice and beans in bulk at my local co-op.

We have a tofu vindaloo curry twice a week - we're addicted! We get the Patak's vindaloo paste and eat it with potato, tomatoes, tofu and rice. Yum yum yum!!!

Saute diced tofu with diced zucchini, onions, and corn. Roll in tortillas, cover with enchilada sauce and bake 20 minutes. Yum.
(you can add cheese too if you want).

I make a killer enchilada casserole with various vegies inside: mushrooms, corn, red peppers, zucchini.........my dh loves it!

also potato tacos and quesadillas with grated zucchini, fetacheese & olives

It comes out different every time. Sometimes I put tomato paste, raisins, cream or other veggies in with the lentils.
