I went to buy guacamole ingredients today, and couldn't find a jalepeno. I found a serrano, which I know is hot, but I don't know how hot relatively. I know the heat develops over time in the guac, so I don't want to do it to taste. It would probably knock my socks off by tomorrow So, can anybody advise me on how to use the serrano in place of a jalepeno? One for one? Half a serrano to one jalepeno? One serrano to half a jalepeno? 3.14159 serranos per 6.02 x 10^23 jalepenos?

Serranos are 10,000 to 23,000 Scoville units (measure of heat in the pepper) and a jalepeno is 2500-5000 Scoville units. I've never had a serrano, I don't think, I'd use half, and half the seeds too.

I'd probably use half of the serrano with NO seeds! The seeds is where the heat is and they can get ya!

Serranos have some kick! Personally, I'd start with maybe 1/4 of the pepper, no seeds, and then let it sit overnight and see what you think. You can always add more, if you want.
