I dont know if the instructions for pearl barley would work??

They say 2 1/2 cups water and 1/8 teaspoon salt to a boil. Add one cup rinsed pearl barley, cook for 45 minutes over low heat until tender but still chewy.

for brown pot barley, use 2 cups boiling water, add 1 cup barley and simmer 20-30 minutes.

It depends what kind of barley you got

Pearled barley is the must refined, Hulled barley is the most unrefined.

For both, place 3 cups water to 1 cup barley in heavy pot. Cover and bring to boil. REduce heat to low.

Pearled - simmer 55 minutes, hulled - simmer 1 hour 45 minutes.

If you are not sure what kind you have, just check it after 55 minutes, if it is still hard and there is still water, keep cooking until tender.

I cook it the same way as rice or add it to stews and let it do it's thing.

Thanks, ladies! I had to cook it for almost 2 hr but it turned out great. Even Mr White rice dh ate it.
