I just bought lots of quinoa and now I need some tried and true recipes that I can serve to my kids. I just made a toubouleh salad with it, came out great and I have a pudding recipe too..haven't tried that yet. But, still looking for some more that will have kid appeal.

You can just substitute it for rice -- top it with chili, stews, beans, etc. or just cook it in a little broth and serve as a side dish.

My favorite way to eat it, although maybe not so kid friendly, is to top it with steamed/wilted red chard (or other greens) and tahini sauce.

we LOVE quinoa for breakfast, just cooked straight up and served with maple syrup, dried cranberries, and cashews. a real crowd pleaser here, and very nourishing.

At Wildoats.com they have a quinoa chocolate cake recipe that I've been wanting to try. It looks really good!

I grind it and use it in place of flour in a breakfast muffin recipe that is to die for- no flour and no sugar! I made a loaf of bread out of the recipe but it's so dense, we can't finish it! LOL

Deborah Madison's recipe (but from my faulty memory...):

cook up some quinoa. Mix in some cumin, corriander, olive oil, lemon juice, diced peppers, small rounds of greeen onions, diced dried apricots, soaked currants and toasted pine nuts. I think I used to add a dash of balsamic for extra kick. Its delicious eaten stuffed in pita bread.

in a saucepan, saute some garlic and onions in some olive oil. add 2 parts water and one part quinoa. bring to a boil, reduce heat and cover for approx. 15 minutes until cooked. yum! (don't forget to rinse the quinoa to get all the saponin off...i didn't know that the first few times i made it and it tasted so bitter!)

My DH's favorite quinoa recipe (it's quick and it's a pantry-cleaner):

1/2 cup quinoa
1 veg bouillon cube
2 cups water

Boil the above until the quinoa is cooked and fluffy. Turn it into a greased baking dish and add:

1 jar sliced hearts of palm (or artichoke hearts)
2-3 sundried tomatoes, cut into bits
1 can white beans, drained

Bake at 350 for 20 minutes or until browned on top. I invented it one night out of desperation, and we love it.

Tortilla Quinoa Soup

1 tsp olive oil
2-3 cloves garlic, minced
1/2 pkg chipotle-flavored taco seasoning
1 zucchini, cut into half-moons
1 can diced tomatoes, with juice
1/2 cup quinoa
5-6 cups water
1 corn tortilla, cut into strips and crisped in the oven for 10-15 minutes
1 large handful cilantro (optional)

Saute the garlic and taco seasoning in olive oil for 3 minutes, or until fragrant. Add all the remaining ingredients (except the tortilla strips) and cook over medium-high heat for 15 minutes, or until the quinoa has become translucent.

Top each bowl with tortilla strips and cilantro.
