I've just started adding amaranth to my oats in the morning. I put 1/3 cup steel cut oats and 1/6 cup amaranth in 2 cups of boiling water and cook it for about 25 minutes - that makes quite a big bowlful (for one person). I made some for dh in the weekend and he didn't like it because it's got quite an earthy flavour - I should have put less amaranth in to start with so he'd get used to it gradually.
But I love it! (and that's what matters most )
