my favorite dish in the whole wide world just happens to made with seiten!
ok, i am from the south where chicken fried steak is everywhere, and before i was a vegetarian, this was one of my favs. so this is how we make the veg-substitute for chicken friend steak. warning! this is not a low-fat recipe!
-take the seiten cutlets, salt & pepper them, and batter them in either egg & milk or just plain soymilk if you're vegan. flour them with a bread-crumb mixture. we even take pieces of potato chip and crush them up in the flour-bread-crumb mixture to make the seiten extra crispy. re-batter them and re-flour them. you can even do this a third time if ya want extra yum!
when you're done, pan fry in a little bit of oil until golden on each side. serve with mashed potatoes for dippin' and green beans or other vegetable of choice.
