I have the opportunity to buy lots of fresh heirloom tomatoes from our CSA, but can't decide if I should freeze or can. What do you prefer? I have already decided to freeze the corn (i think!)...
I prefer to freeze them... I am a bit lazy, and do a lot of canning this time of year anyways! If I take the frozen ones and plop them into a bowl of really hot water, the skins come off really easily. No fuss !!!
i can sauce, tomato puree and salsa and freeze chopped tomatoes. i haven't had great luck canning chopped tomatoes b/c they sort of cook down as they can leaving a huge air space in the jar.
