I love fall, it's apple season.

Anyone have great apple recipes? I'm 4 and half months pg and apples are a huge craving for me and I'm totally giving in.

I was planning on making an apple crisp this weekend, anyone have a good recipe? Or anything else baked for apples? Or for apples in general? Thanks!

I think I'm making apple crisp this weekend too. Here's my recipe:
8 baking apples
3/4 cup flour
1 cup brown sugar
1/2 cup butter (1 stick), room temperature
1 tsp. cinnamon


-place sliced (pared and cored) apples in bottom of buttered baking dish
-combine brown sugar, flour, and cinnamon, rub butter into mixture to make crumbs
-spread crumbs over top of apples, patting down evenly
-bake at 350 for approx. 40 minutes uncovered
-makes 6-8 servings, goes well with cream or ice cream

I have an apple muffin recipe:
Muffin:
2 1/2 cups apples, peeled and chopped (about 6 medium apples)
2 cups flour
1/2 cup sugar
1 tsp baking powder
2 teaspoons cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
2 eggs
1/2 cup butter (1 stick) - I substitite applesause for butter
2 teaspoons vanilla

Streusel topping:
1/3 cup brown sugar
1 Tablespoon butter, room temperature
1 teaspoon cinnamon
1 Tablespoon flour
-combine all into crumbs and set aside

-mix flour, baking powder, baking soda, and salt in medium bowl
-in large bowl mix eggs, butter (or applesauce) sugar and vanilla
-stir apples into wet mixture and gradually add dry mixture to wet (batter will be thick)
-sprinkle streusel topping over muffins
bake at 350 for 20 minutes

I love apple crisp, too! I make the crisp part with some oatmeal (uncooked) in place of some of the flour. Another thing you could do is to core the apple and stuff it with a butter/brown sugar/cinnamon mixture. Easy and oh, so yummy! Another thing I do is make milk bread and, after the first rise, roll it out to the width of my loaf pan to about 1/2" thick. Then I brush it with butter, sprinkle brown sugar, cinnamon, and spices over it, then sprinkle on peeled, diced apples. Roll it up, plop it in the pan and let rise for the second time. Bake and enjoy the best cinnamon apple bread ever! (I use the Milk Bread recipe in the Joy of Cooking, it is sooooo easy!)

swampwitch, once you stuff the apple I'm assuming you bake it..how long? temp?

It would be helpful if I left you all the instructions, huh? Blame it on my pregnant brain...yes, you do bake it at say 350-375 for, oh let it go for 20 minutes then check on it. You want the innards bubbling and the apple soft.

I've got the pregnant brain fuzzies too! I can't tell you how many times I walk out of my house and down a few yards before I remember I forgot something and have to go back!

Your recipe sounds yum, looks like I'll be in the kitchen a bit this weekend
