I have a serious sweet tooth. Lately I have been craving sweets a lot. I want to wean myself off of eating sugar but I would still like to have cookies once in a while. I eat a really healthy balanced vegetarian diet besides the sugar ! I would like to find some recipes for cookies or muffins that are sweetened with apple sauce, honey or molasses instead of refined sugar. Anyone have a good recipe ?

These cookie recipes are from 'Simple Treats' by Ellen Abraham. You might enjoy this cookbook as it's vegan as well as wheat free and almost no sugar. These are two of our favourites (they use a bit of maple syrup, hope that's ok):

Ginger Snaps
1/2 cup rolled oats, divided
1/4 cup oil
1/2 cup maple syrup
2 Tbsp blackstrap molasses
1/2 tsp vanilla
1 cup barley flour (or wheat flour if that's ok)
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 1/2 tsp powdered ginger
1/2 tsp ground cinnamon
Preheat oven to 350. Process 1/4 cup of the oats in a food processor until they are the consistency of coarse flour. In a small bowl, mix the oil, syrup, molasses, and vanilla. In a separate bowl, place the ground oats and remaining rolled oats. Add the rest of the dry ingredients. Pour the wet into the dry and mix until well incorporated. Spoon the batter onto well-oiled or parchment-lined baking sheets and bake for about 15 minutes or until the cookies are golden around the deges. Let them cool on the cookie sheets for about 5 minutes.

Oatmeal Raisin Cookies
1 1/2 cups rolled oats, divided
1/4 cup oil
1/2 cup maple syrup
1/2 tsp vanilla
3/4 raisins
1/4 cup chopped walnuts
1 cup barley flour
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp cinnamon
1/2 tsp salt
Preheat oven to 350. The method is the same as the above recipe. Process half the oats. Mix all the dry. Mix all the wet. Add them together. Drop by spoonful onto the baking sheet (press down to flatten a bit). Bake about 15 minutes.
