Hi everyone,

My daughter has become a vegetarian officially and I am needing ideas on how to pack a yummy and nutritious vegetarian lunch box for her each day for school. Do any of you have any healthy, vegetarian, yummy lunch box ideas for me?

Here's one of my favorite recipes.

Three Bean Salad

2 cans white beans, drained
1 can red kidney beans, drained
1 can garbanzo beans, drained
6 green onions, chopped
3 carrots, cut in pieces
1 bunch parsley, finely chopped
1/4 cup olive oil
1/8 cup balsamic vinegar
1/2 - 1 teaspoon salt
1/8 - 1/4 teaspoon pepper
1/2 cup tomatoes (optional garnish)

Drain and rinse beans. Mix beans and veggies together. Next, add olive oil and stir to coat (add more olive oil if desired). Add balsamic vinegar, salt and pepper and mix thoroughly. Top with tomatoes if desired.

-sandwiches on good whole grain bread with fillings like peanut butter, hummus,
grilled portello, cheese, avacado and veggies

-lots of fruit and veggies


-nuts or trailmix

-pasta salad with pesto, veggies, beans etc.

-veggie nori rolls

-cold cereal (she can buy a carton of milk at school)

-foods encased in dough family like cornish pasties, empanadas, calzones

-granola bars

-soup in a thermos

-salad, although I'd make sure it was hearty and had enough good fats

and of course there is always the Vegan Lunch Box website on blogspot (and I believe she has a new cookbook out)

Just seconding (thirding?) the recommendation for Vegan Lunch Box. I have her cookbook as well, and it is definitely worth the money. All the recipes that I have made have turned out absolutely amazing. (And I'm not even a vegetarian anymore, much less vegan!)

Does your dd cook at all? Would she like to be involved in the preparation of her lunch at all? (If she doesn't have time in the morning, she can prep stuff and help you pack her lunch the night before.)

I totally agree with NannyL. Twelve is a great age to learn to cook, if she hasn't already. One of my girls went veg at this age. We got some cookbooks and she started shopping with me and reading labels. She became quite a good cook and would make us dinner a couple times a week, which was wonderful. And now that she is on her own she cooks big feasts for all her friends.
