I had about 3 cups of leftover brown rice, lentils, and barley. I cooked up some chicken in broth and added in the leftover grains, the leftover carrots from a veggie plate earlier in the week, a bag of frozen peas, a chopped up sweet onion , and a bunch of spices.
If dh is lucky I'll make him some sour cream biscuits too. We'll definitely have a salad to go with it though.
I've got a few strawberries and whipped cream left so there is dessert too
