Chicken tenders from TJs and raw broccoli with some bleu cheese dressing. And then some Annies choc bunny grahams. Probably too many of those. Yum yum.

Not typical but I don't have the same thing for lunch often.

I didn't eat lunch today. Yeah, it can be a normal thing for me. I tend to eat a late breakfast and then I'm not hungry for lunch.

On the days I do eat lunch, my choice can vary a great deal. Depends on what I have in the house or if I feel like grabbing a light lunch out somewhere.

I got Nigella Lawson's most recent cookbook this weekend so I made the recipe on page 284 with a bit of tweaking for my preferences. It's a tuna and bean salad except I like wild red Alaskan salmon (8 oz) and Great White Northern Beans (15 oz). I couldn't find the cranberry beans she recommended. You just toss the two with some finely diced red onions, 1/4 cup of fresh lemon juice, finely chopped parsley. It's very delicious. Even my DH who is not much of a salad person liked it. I also had a medium banana and some wheat crackers from the health food store.

The salad was leftover from last night and it's normal for me to eat leftovers for lunch.

Normal is just a setting on your dryer.
