Our family favorite is very, very simple.
Marinate a block of cut up tofu (cheese cube size) in a jar of marinated artichoke hearts, plus a jar of Italian dressing (we use the Good Seasons type you make yourself). Let that marinate overnight. Add to a pound of cooked pasta, along with a can of black olives. So, it'll be pasta, tofu, artichokes, and olives.
Even my (very) picky brother loves this stuff! We have it for every summer holiday.
