I really like dark chocolate, but dh bought me a couple bars of very dark organic chocolate (85% cocoa) recently that are just too much. As much as I normally like good dark chocolate, these are just too strong for me.

I don't want them to go to waste. Any suggestions of something I might be able to make with them?

Look for a brownie or chocolate cake recipe that calls for melted chocolate instead of cocoa powder, then use a little less chocolate (and more sweetener) than called for in the recipe.

Or melt it into hot cocoa.

It makes great dipping chocolate for fruit or nuts. You could also just use it for baking. Pretty much anything that has chocolate in it. Chop it up for chocolate chip cookies, make a chocolate pudding or mousse, hot chocolate.

You could make truffles with it. Since it's too dark for you, you could use one of the bars with a bar that contains less cocoa (60 %) for example. They are really easy to make. I make them all the time and they are delicious. I've yet to perfect rolling them into balls, so I pour the warm truffle mix into a pan that has a flat bottom and cut them into squares once they are chilled.
