I bought some rice flour and don't have any of the other flours on hand or the xantham gum etc. Are there *any* sweet recipes I could bake?????

I have cocoa, choc. chips, sugar, eggs..

help! I'm craving something.

Crepes! Roll some of your chocolate chips up in them

1 cup rice flour
1 cup milk
1/3 cup water
2 tbs sugar
2 eggs
1 1/2 tsp vanilla (or more)
2 tbs oil or melted butter + more to coat pan

Mix with wire whisk. Use butter or oil in a skillet. Pour about 1/3 -1/2 cup of batter in pan (depending on size of pan). Roll the pan around so that batter covers the entire thing. Cook for 1 minute on first side and about 15 seconds on other over medium heat. Make sure your pan is fully heated before putting in the first crepe.

That's basically my pankcae recipe, only with half the milk and eggs, no added water, and the same amount of flour.

You can also try googling flourless chocolate cake recipes.

Any cookie recipe can be used without any changes- the results might be more crumbly but it will hold together well enough. Cake recipes will totally fall apart without the xanthan gum.

I ended up making a GF brownie recipe and everyone loved it!

I had no idea the cookie recipes might turn out similar. Thanks for that Ruth!
