So I just found this new recipe and tried it. All I can say is wow, wow, wow, it is sooo good... and super-duper simple, too!

You need:
2 cups of oats
3/4 teaspoon baking soda
1 teaspoon cinnamon
4 medium over-ripe bananas
1/4 cup sunflower seeds
1/4 cup chopped dates

Here's what to do:
Preheat oven to 350 degrees. Prepare cookie sheet by spraying w/cooking spray or line w/parchment and spray parchment w/cooking spray.

Blend the oats in a blender or food processor into a fine (or whatever courseness you desire) flour (OR-buy oat flour). Add baking soda and cinnamon. Transfer to a mixing bowl.

Blend banana in processor/blender until smooth. Add it to the mixing bowl w/the oat mixture. Add the seeds and dates, mixing well.

Use a 1-oz cookie scoop (or spoon) and drop onto prepared cookie sheet.

Bake for about 12 minutes. When done, take out of oven and let stand on sheet for a few minutes to set. Transfer to cooling rack to cool completely. Enjoy!

(Next I will make a batch for dd2 without the seeds, dates or cinnamon.)

Now... This is a variation that we used as a special treat:
We omitted the cinnamon, sunflower seeds and dates. We added some dairy free chocolate chips in place of the seeds and dates. Instant yummy-ness! :

All natural sahm to dd1(12yo) and dd2(6yo). Married 16 years.

Where do I find more gfcf type recipies? Everything I google wants me to buy into some type of plan/books. I am not in a position to do that right now.

Doing what I can to make better choices every day!

thanks for posting this. I love sweets and treats but I really need to watch what I eat so these might come in handy.

Finally got around to making these.

I used sunflower seed butter instead of chopped sunflower seeds, date spread instead of chopped dates --just what I had on hand. I also added some vanilla because it isn't making cookies unless I add vanilla

Absolutely delish! Thanks so much for the recipe! We'll be making these a LOT, and trying all kinds of variations.

I have lots of apples and wonder if apple butter could sub for bananas, for example....

I make one that's really similar. I don't grind the oats or blend the bananas though. Just dump it all together and mix it up. My dd used to love to mash the bananas with a potato masher when she was little.

Oatmeal Banana Cookies

3 ripe bananas, smushed
1/3 cup oil (I use pb and just a little oil when I'm not making them for babies)
2 cups quick oats
1/2 cup nuts (I leave out)
Can add up to a cup of dried fruit and/or chocolate chips.
1 teaspoon vanilla
3/4 teaspoon salt
1 teaspoon baking powder

Mix all ingredients together. Bake at 375 for 20 min.

These won't flatten or spread while baking so you need to press them into cookie shapes as you put them on the cookie sheet.
