So I just found this new recipe and tried it. All I can say is wow, wow, wow, it is sooo good... and super-duper simple, too!You need
2 cups of oats
3/4 teaspoon baking soda
1 teaspoon cinnamon
4 medium over-ripe bananas
1/4 cup sunflower seeds
1/4 cup chopped datesHere's what to do
Preheat oven to 350 degrees. Prepare cookie sheet by spraying w/cooking spray or line w/parchment and spray parchment w/cooking spray.
Blend the oats in a blender or food processor into a fine (or whatever courseness you desire) flour (OR-buy oat flour). Add baking soda and cinnamon. Transfer to a mixing bowl.
Blend banana in processor/blender until smooth. Add it to the mixing bowl w/the oat mixture. Add the seeds and dates, mixing well.
Use a 1-oz cookie scoop (or spoon) and drop onto prepared cookie sheet.
Bake for about 12 minutes. When done, take out of oven and let stand on sheet for a few minutes to set. Transfer to cooling rack to cool completely. Enjoy!
(Next I will make a batch for dd2 without the seeds, dates or cinnamon.)Now... This is a variation that we used as a special treat:
We omitted the cinnamon, sunflower seeds and dates. We added some dairy free chocolate chips in place of the seeds and dates. Instant yummy-ness!
