Someone made mention awhile back, I think on this forum, of freezing kale. Can anyone tell me how they do this? Do you just wash it and put it plain in a freezer bag? Or do you have to blanch it first? And how long does it generally keep well in the freezer?

I usually chop and steam it for about 2 minutes, let it cool, then pack it into a freezer bag. I think you can also freeze it uncooked, but honestly you can cram more into a bag if it's been slightly wilted and I tend to freeze a lot of it.

I doubt it. Kale will even grow through the winter! It is very hardy.

i wash, remove the stalks and freeze in a bag. i figure we aren't going to eat it raw so freezing it won't really affect the way it performs in cooked dishes...

I rinse the leaves off, de-rib them, and mince them. I just freeze them raw because we're generally cooking with them anyway, and I don't like the double-cooked texture they sometimes get if cooked before freezing.

Yeah, we grow kale here in NJ (cold, sometimes snowy winters) for ten months out of the year.
