I made these yesterday, and they are some seriously hearty cookies!  I'm happy that they aren't too sweet and that they have good stuff in them. I used almond butter and cut the sugar a bit.

Now that I'm nursing again, I've been on the lookout for good recipes, cookies or savory items, that are single handed, easy to grab and healthy.  Do you have good recipes?

Though not super healthy by the time you factor in the chocolate (I usually use dark chocolate chips) I LOVE this recipe for Pumpkin Chocolate Chip Muffins.

I usually bulk these up a bit with nuts, usually walnuts, but you can always leave them out. They are dense and 100% whole wheat - a huge hit in our house. I have made several batches of these for new moms.

I like to keep these in my fridge. I use natural peanut butter.
