So I followed the water kefir recipe I found online and its terrible. Can someone point me to a recipe that is good? Maybe something with fruit juice. I want to make something my kids might actually drink.
What did you try already? I just add some blueberry juice (squeezed myself of course
), since blueberries are my only safe fruit- but I'm sure you could add all sorts of fruit juices. I think that dogmom (the MDC mom who I bought my grains from) has a couple recipes... let me try and remember (I gave my instructions to a friend.) I think one just used lemon juice for a lemonaide, and one used a little vanilla for a cream-soda-type drink.
So what specifically was so terrible? I found that I have to bottle my kefir at exactly the right moment- too soon and it's just flat sugar water, too late and it's fizzy sour water.
Do a search in the TF forum too- there's a million water kefir threads around there with good recipe ideas.
There seems to be such a crap shoot with this. I made several batches that were fabulous and the last few were nasty, nothing that I know of changed, but they tasted way different. there is that fine line between flat and too alcoholic. I tried the Dom's grape kefir recipe, but ugh, not for me at all and I followed it to a T.
I have finally got my water kefir to a point where I really like it. I follow dogmom's recipe using 1/2 c. sugar, 1/2 lemon and a dried fig for 6.5 c. water. I let it sit for 48 hours then remove the grains, fig, and lemon (squeezing the lemon juice into the kefir) and bottle the kefir in airtight bottles. It is really fizzy with little sweetness but not sour. I also think the key is to bottle it at the right time to get the right amount of fizz and sweetness. I have also tried adding in some dried fruit during the bottling, like dried Just Cherries or Just Raspberries (bought at Whole Foods). The cherry one was especially good. I have also tried Dom's recipe using molasses but I'm not too fond of it.

Great idea! I am going to have to try this. How much dried fruit do you add?

I guess i'll have to play around with it more. I'm putting it into canning jars. that's all I have.
