Chia Seed Pudding Anyone? - Mothering Forums

Did anyone else notice a post about chia seed pudding in the N&GE forum a few days ago? You can make any simple mix of your favorite "milk"- add a bit of sweetner- and some chia seeds- whir it in the blender to break them up or leave them whole for a tapioca effect- let it cool for a while and instant pudding! No starches involved! Plus, chia seeds are supposed to be insanely healthy for you!

I made this recipe the other day, but I was out of dates- so I think I used some raw honey. Oh, and I made my own coconut milk by mixing in 1/2 c shredded unsweet coconut w/ 1 c water in the blender until smooth.

There could be endless taste variations on this, just adding whatever flavors and "milks" you like- or other yummy fruits! Yum! Pudding with no work!

wow thanks! this looks great! now I just need to find some affordable chia seeds. anyone allergic here? should I not give it to a child under 2? (I give my DD flax but no other nuts or seeds)

I bought Chia Seeds through Mountain Rose Herbs. I don't know if that is the cheapest source though, haven't searched that out.

I make it using flax seeds. It's yummy! Can post the recipe tonight!
