I honestly don't know how to go gluten AND rice free!!!! Agh!

I am particularly worried about bread and muffins/cakes/cookies. Let me know what you got!

My sandwich bread meets those requirements, and I think I have chocolate cupcakes that work. My kids and I are gluten/corn free (and dairy/soy free) and DS was also rice free for almost 2 years so I didn't rely on it very much. We use sorghum flour, tapioca starch, sweet potato flour, light buckwheat flour, millet flour... My blog is broken at the moment (trying to get the virus out of it) but I'll try to copy and paste later today when I go back on there.

Some raw breads meet this requirement if you're ok with nuts. Just google raw bread and check out the recipes. They're dehydrated but if you don't care about the fact that they're not entirely raw, you can cook on a really low temp to warm up and harden just the same.

Oh yeah and raw oat groats are more likely to not be contaminated with gluten and can be substituted as a flour once ground. Also buckwheat if you can get it from a non-contaminated source as well. And...sorry I keep coming up with things - quinoa can be ground into a flour and be a substitute for wheat as well. Good luck, happy experimenting!

I feel for you! We're gluten free, rice free, soy free, dairy free, buckwheat free, almond free (and on and on!) Gluten, rice, soy free is a challenge and I can only imagine that pulling out corn only compounds the challenge. We have lots of recipies that use a flour mix that is sorghum, tapioca, arrowroot, corn or potato starch and a high protein flour (we use corn but I think you can use almond or chestnut as well and you could experiment with others.) Let me look up the title of the book and I'll get back to you.

We really enjoy sorghum-based breads better than rice flour ones- it tastes better- so don't despair. I just tend to mix flours and starches in proportion to Bette Hagman's rice flour blend, subbing what's handy. You also might want to look into coconut flour baking. Some are really coconutty, but Bob's Red Mill isn't. There are plenty of recipes out there in the ether, and it's easier than mixing a bunch of flours, plus it requires tons of eggs, so the baked goods are more nutritious than some.

Hi,

I've just joined and would really appreciate any help. I'm gluten and lactose free and am currently on an elimination diet taking out salicylates, amines and glutamates as well as rice. I don't like eating meat so am confining my diet further by not eating meat. I'm finding it quite a challenge but so need to be well that I'm not having any trouble sticking to the restricted foods but I would really appreciate some help with recipes. A bread recipe would be very helpful as I could use it for lunch along with the pear chutney recipe that I'm allowed. I'm going to try Hemp milk, has anyone tried this?

We have been grain free for about a month and a half and it just takes time to get used to but once you do there's so many things you can make. If you are still able to eat grains like sorghum, millet, buckwheat, etc. then you shouldn't have a problem at all! I just made grain free chocolate cupcakes using coconut flour for my daughter's 2nd birthday and they were AWESOME. The recipe was from www.elanaspantry.com, I have yet to try a recipe from her that I didn't like.

If you can do all the flours in this one it's an AWESOME bread recipe http://aprovechar.danandsally.com/?p=228 and it's dairy and egg free too :)

I don't know if you've heard of the Simple Carbohydrate Diet but if you google recipes for that you should be able to find a lot that meets your requirements. They're pretty basic, whole foods recipes. Can you do almonds? I have been baking a lot with almond flour and it's amazing what you can do with that. We've been enjoying pancakes, muffins, pizza, etc. In the book "Eat Well Feel Well" there's a recipe for Cashew bread that I haven't tried yet but sounds really good. Hope that helps!

Oh, and yes...Hemp milk is VERY good, we used to drink the vanilla kind all the time. Now we just do almond milk because it's a little cheaper and my girls are getting older.

Just a FYI: 25% of Celiacs react to Gluten Free Oats as well. Also, they found that coffee bean protein is similar to Gluten protein. They don't recommend any celiacs having coffee or decaf anymore, as it was the bean and not the caffeine that was the issue.

 

Quinoa and Amaranth flours are gluten free and Cereal free and currently apart of the Amaranth Family (previously in Goosefoot family).

 

I'm still working out Allergy Free breads for those with unusual allergy combinations, however this muffin recipe might work.

I posted this elsewhere, but I reformatted it much better here. and can't find the link to the other one.

 

Quinoa Muffins:

Free of: Cereal Family, Corn, Dairy, Egg and Soy  (With Egg and Dairy Options)

Preheat oven to 350 F (180 C)

Ingredients &Directions:


1 Cups Quinoa Flakes
1/2 Cup Buckwheat Flour
1/2 Cup Potato Starch
1/2 Cup Tapioca Starch or Flour
1 tsp. Featherweight® or Hain® Baking Powder (Corn free)
(or use 1/2 tsp Cream of Tartar and 1/4 tsp Baking soda)

1 tsp. Baking soda
1/2 tsp Kosher Sea Salt


1.) Mix these together with a whisk.

1/4 cup Olive Oil
[below may substitute Milk and Egg instead: 1/2 - 3/4 cup Milk, 1 - 2 Eggs]
1/2 cup hot water
1/4 cup Mashed Potato
1 medium banana, mashed

 

2.) Blend together.

1/2 tsp Cream of Tartar
1/4 tsp Baking Soda
1 tsp Tapioca or Potato Starch
2 TB warm water

3.) Mix together.

4.) Add to wet ingredients and Mix again.


5.) Add the dry ingredients, a little at a time.
6.) Beat well, until free of lumps and smooth.
You want a thick batter. If using milk,  Use 1/2 cup milk

first, then add in the other 1/4 if needed.

7.) Optional:
1/2 cup Organic Dried Fruits
Mix in well.

8.) Pour into muffin cups.
9.) Bake in the pre-heated oven for about 20 minutes.
Cool on a wire rack.

Discuss this with your doctor:

Flours:

Quinoa and Amaranth flours, Amaranth family  (and gluten free)

Buckwheat (Buckwheat family)

 

Binders: Banana ( medium)  if Egg is not allowed. Egg is always the best choice.

Ener-G Egg replacer might work, but you'll have to read the ingredients list to see if it works for you on your diet. Isn't considered Corn free, but not sure of its salicylate content.

 

 

FYI, just in case:
With Salicylates: Any plant matter can cause issues randomly, because so far we don't know which salicylates are causing the issues, and plants can create more or less salicylates depending on what it thinks it needs. Dr. Feingold has some information on this. feingold dot org.

 

With Amines: Try amine recipes dot com. She creates low-amine recipes. However, she does use meat and Rice, but you might find something. I didn't find a bread recipe yet, but if you ask her, she might be able to get one for you.

 

Vitamins and Minerals: B12 is best gotten from Salmon. If you are eating Vegan/Vegetarian, you'll want to use supplements and be sure to get your blood tested for B12 deficiency every 6 months. I only mention this, because you said you weren't eating meat and often times, this is the only problematic area.

My family is starting to transition to a GF diet.  I've noticed that xanthum gum is a common ingredient in GF foods.  Just wanted to know what everyone thought about adding xanthum gum or guar gum to their diet.
