Also, a good book, though I can't recall the author, is The Body Ecology Diet. Good info and recipues for making cultured veggies, kefir, etc..

My "The Power of Probiotics" here has info as well on the other amazing things those little flora do for us.
Here is a list of some foods that contain probiotics/beneficial bacteria and enzymes:
*cultured dairy, such as yogurt, sour cream, buttermilk, kefir, cultured butters and cheeses
*kim chee, made from cabbage (korea)
*oshinka, made from various vegetables (japan)
*amazake, made from rice (japan)
*cultured soy~ miso, tempeh, tofu, yogurt, fermented soy powder
*sour kraut
In addition to these foods, the following foods also benefit digestion and immunity, and work wonderfully to boost the probiotic foods abilities:
