1. homemade mac n cheese
2. grilled chicken with mashed potatoes and green beans
3. Travelling Tacos
4. Chicken over some pasta alfredo
5. Cheesy Potato Soup with whole wheat french bread
6. Lasagna Rolls
7. BBQ steaks with corn and mashed potatoes.
8. I spaced and forgot we had a softball game at 6:30, so we grabbed dinner at the stadium.
9. Turkey meatballs with pasta

I'm kicking myself for forgetting that softball game, I got ready to start dinner at 5:30, and dh was like "what are you doing? We have to leave!" I thought the game was at 7:30. Oops. Oh well. One meal out so far this month is still way better than we were doing last month, so I'll just have to be prepared from here on out, right?

I just saw this thread and I really need to keep eating at home this month. Basically I need to use up all the food I have stored up here and spend as little as possible on eating out. So far this month we haven't ate out once but its been hard. None of us have been feeling well and my allergies are terrible. So a little motivation might do me some good.

Tonight's dinner is already in the fridge. Its breakfest cassarole with homemade bread. I made the cassarole for breakfest for the week but theres no way we are going to finish it before it goes bad (DH doens't eat breakfest and DD only eats a little bit in the morning) so we are eating it for dinner. I just took the bread out of the breadmaker and it smells GOOOD..

Sometimes I feel so tired working FT WOH and cooking cooking cooking. Need a jolt of motivation.

PB&J for lunch
Granola bars for another snack
Fried okra, french fries, and hamburgers for dinner

It was dh and dd's day off (work/school) so we slept in and ended up eating "brunch" around 11am. So "Linner" was at 4pm. I'm sure we'll have a snack later...just wanted to explain the two meals, lol. I'm doing my best to use up our food before it goes bad. Tomorrow is payday and I want to keep my grocery budget as low as possible...we'll see!

1) Dinner:Vegan Sloppy Joes, sweet potato fries and Salad.
2)Dinner:BBQ tofu, baked potatoes, green beans
3) Breakfast: whole wheat pancakes, melon. Dinner: potato and eggplant moussaka with salad.
4) Dinner: Jerk Seitan with bell peppers/onions, over rice.
5) Dinner: Tempeh with spicy peanut sauce over broccoli and rice
6) Lunch: pizza with roasted garlic, caramelized onions and kalamata olives. Dinner: A pint of ben and jerry's Gingersnap (99cents each! lol)
7) Breakfast: biscuits and mushroom gravy (trying to replicate a restaurant meal we love...turned out okay...). DINNER: soft tacos and corn
8) DINNER: Breaded Ranch Tempeh, quinoa, broccoli
9) DINNER: nothing. I was stuffed from eating out with my mom (MOOCHED!!) at lunch and she gave dh $5 to go get a "big carl" that he's been wanting to try (he's a omni, lol). So yep. We all ate out today, but not on our dime. I feel no guilt, lol!
10) BREAKFAST: tempeh/white bean "sausage" patties, scrambled eggs with bell pepper and mushrooms. DINNER: Pizza (same as on the 6th)

I just realized how much we spent on restaurants last month, so we are NOT eating out this month. "Cheap" date night once a week, and breakfast out once a week.

As another Mama mentioned, it seems like a convienence to get take out or go out to eat, but after the travel/waiting/screaming kids, it is so not worth it.

1st- homemade vegetable soup/grilled cheese
2nd- talapia/rice/salad/veggie
3rd-Chicken Cattatiore
4th- Pork Roast/potatoes/corn
5th- Baked Pasta/garlic bread/salad
6th- BBQ Pork (from leftovers)/Rice/Carrots/Broccoli Casserole
7th- Hamburgers/Hot Dogs/French Fries/Salad
8th- Homemade Mac N Cheese/Edamame/Corn on the Cob/leftover Burgers
9th- Chicken/Salad/Whole Wheat Pasta Penne

Yesterday ended up being frozen pizza and salad.
Today was grilled chicken, pasta, and corn.
The last two days I sooo did not want to deal with making dinner. I took the easy path with the pizza, but today I just made something easy.

Still need to figure out what we're eating tomorrow, though.

I really love this thread!!! : So usually we're eating out a lot, but now I've managed to plan out our entire month of meals except for the 1st & 3rd, and so far we're sticking to it! : : :

1 - McDonalds (late from work!)
2 - Homemade Ribs & BBQ beans
3 - Culvers cheeseburgers (dinner at a friends got delayed due to grill issues)
4 - Pork Fried Rice & Egg Rolls
5 - Chicken Chow Mein & veggies
6 - Lentil Dal with Rice (this was a first time recipe, and not a winner suggestions wanted to add more flavor to this)
7 - Ribfest & pies with summer salad
8 - Tacos
9 - Leftovers (so yummy!)
10 - BLATs (Bacon, Lettuce, Avocado & Tomato) sandwiches with Fries

When my recipes are a little bland - as far as indian-ish food goes - I typically just add more curry and/or salt to taste. Usually does the trick

Oooh good to know!! I did add quite a bit more salt, which did help when we had some with leftovers. The recipe asked for jalapenos to be added at the end and in 1/3s, so I'm thinking maybe I'll add another one to mix and maybe puree it to spice it up a bit more instead of such a very subtle heat.

I just realized I wasn't putting any veggies down. We do eat one to two types of veggies every night but it tends to be the same things. Its either a salad or steamed broccoli.
September 10th- Breakfast casserole and homemade bread

September 12- Leftovers
Week ahead plans:
September 13- Chili
September 14- Chili over mashed potatoes (sounds weird but DH and I both started eating this in boot camp and got hooked, we both enjoy it)
September 15- Spaghetti and homemade French bread
September 16- French bread pizza
September 17- Island kielbasa
September 18- Leftovers

This week has been good for using up stuff in the freezer even though I REALLY didn't feel like cooking. It's really been an exercise in self-discipline.

9/11:

A big improvement over the past two days.

Breakfast: Leftover zuchinni pancakes w/homemade syrup and butter (not homemade, , but local, hormone free and yummy... so that's something, right?)
Lunch: Carrots and Homemade Ranch dip (of course), PB&J (natch), and cubes of Swiss cheese
Snacks: Fruit, homemade chocolate pudding pops (low sugar! Stevia rules!)
Dinner: Mmmm. DH made glorious garlic and rosemary infused thin crust pizza with basil and tomatoes, and we had cucumber salad with fresh garden cukes. They were sooo crunchy a delicious.

I'm in!
1-vegan vegetable soup with all veggies frm market/garden/leftover cut-up pasta/a jar of salsa on its way out
2-Vegan Tofu green curry on rice/cut up cukes/tomatoes from garden
3-Vegan stuffed zukes. Stuffed with a lentil/rice blend and vegies. Theres enough of the stuffing that I froze some to make a quick soup out of when needed. Roasted red potatoes and salad
4-Breakfast for me/Lunch for the boys-miso soup(ds ATE sesame seeds/hemp seeds in the soup!!) Lunch at work for me was leftovers and Kernals popcorn(bought frm a g/c) and dinner for us all was fried rice that dh made...great to come home to food, doesn't happen enough
5-Breakfast: peanut butter sandwiches(ds request), Lunch frozen soup, Dinner a thrown together stir-fry on rice...super close to getting take out after an insanely busy work day then dealing w the kids screaming/having to get the meal on the table so dh could eat before he had to leave for his gig...but I did it! BARELY..atleast it's done now
6- We did ok. Since we had the family thing we ate breakfast before we left/packed snacks for the ride but by the time we we're back on the road ds was cranky/hungry so we went to the grocery store and bought a few things for a picnic...BUT atleast the food will last awhile here, and cheaper then take out
7 nachos w homemade vegan nutritional yeast cheese/lettuce/tomatoes/peppers/olives that need to be eaten..
8. Tofu stir fry with veg and an orange sauce on sweet black rice..Everything organic Everything YUMMY!
9. Dh got a cold so we had miso soup, with hemp/sesame seeds, corn, peas..carrot sticks, cukes and tomatoes.
10) I was in the e.r. all day so dh cooked we had pasta with sauteed garlic/tomatoes/hemp seed sauce. and a tossed salad..yummy for a throw together meal
11) I worked and thought I would make it home between ds's speech class and work so I could get a lunch but I didn't so I had pizza and dh and ds snacked.
12) Going to Hooters Out of all the places in the world..my cousin wants his 16th bday dinner at hooters...plus is there is NO vegetarian on the menu sooo Ds and I can eat before we go and my grandma already said that he can eat her fries my grandma she's so cute!!! and since dh doesn't get off until the party's almost done he'll eat when we get home...shouldn't be too expensive

First jerk seitan sounds amazing...sadly wecan't find seitan ANYWHERE around here: Hopefully at the veg fest this weekend

Secondly how do you bake your tofu...I've done it many times and it's been meh...I'd love to find a good recipe so i can roast veggies and just throw tofu in the oven instead of having to stand over the stove and COOK

Wow, everyone is doign so well!!!! Last night I had vegetarian chili and corn muffins for dinner and the kids had leftover homemade chicken noodle soup and fresh homemade bread. Huge success!:

I make my own seitan...not the hardcore way with straight whole wheat flour...but the lazy way with gluten flour. The pre-made stuff is just way too spendy. You can probably to it with tempeh though.

My omni hubby loves my baked tofu - both meals are from recipes in vegan with a vengence and vegan vittles...do you have either?

If not, i'll post recipes tonight when dh gets home and I'm not nak'ing, lol!

I have been subbed to this thread but decided I ought to join it to help steer me away from all the restaraunts that seem to gobble up our money each month

12- Tonight we are having turkey, mashed potatos & gravy, corn, hopefully some kind of bread or roll, and pie for desert. I am cleaning out the freezer and found I have some turkeys to use up!
