8. Left over roast buffalo with bubble and squeak for lunch, and I'm currently making a potato and spinach curry for dinner, which is smelling lovely!

We were really tempted by getting an Indian tonight, but for once I actually resisted because of this thread. So I'm quite proud of our self control; besides, why buy a curry when you can make one with what you have in the house?
So thanks for the motivation everyone!

1 - Chili and cornbread
2 - Papa Murphy's (50% off coupon; I work late)
3 - Grilled beef fillet with bernaise sauce, sweet peas, and homemade scratch rolls
4 - Dorowat (Ethiopian chicken and onion dish) over rice
5 - FFY (fend for yourself, I work late, dh works late)
6 - Breakfast hash (sausage, potato, red pepper, onion, egg, spices) & toast (we were supposed to have ham and beans)
7 - pasta shells with tomato sauce, tossed salad, homemade texas toast

8 - cottage pie (ground beef, shepherd's pie is made with lamb) (meal planned)
instead we are having
8 - ham and beans with cornbread (what I was going to make Tuesday)

I'm in..I did pretty well last month, but got lazy posting...This month I'm trying to improve

Should post that everything is vegan...unless stated

1-Leftover vegan Jamaican Patties...FANTASTIC!!!
2. I worked and the in-laws took dh and the kids out for dinner...DRIVES ME NUTS! He has ONE night where he has to cook for the kids and his parents take him out almost every fri so he doesn't have too
3. I defrosted homemade tomato sauce, made a mixture of all of our half bags of pasta topped it with hemp seeds and we had roasted spicy potatoes, and peas and corn for dinner...seriously I have no idea what I just cooked..but it was good AND I didn't cave on take out
4. Potato, caulifloer, peas, beans curry on rice...yum!
5. Got called into work so dc ended up w Grandparents, they fed ds Boston Pizza pasta, dh had leftover curry and I forgot my dinner...so I just pigged out on leftover curry and tortilla chips
6. Homemade vegetable/bean/rice soup using the leftover rice frm curry and beans that didn't get thrown in w a ton of herbs frm the garden. And yeastless/wholewheat rea/cracker type thing w rosemary, garlic, basil s and p....Dh finished off the bread in to time...Loved the soup too..lucky I made a big batch for lunch tomorro and hopefully some to freeze
7. Dh worked late and I was sick, so ds had peanut butter sandwich, apple, veg juice and I had soup
8. Tom Yum Noodle Soup and Jamaican patties, even though those are kind of Fridays dinner since I work fridays

can't take credit for them, they are from Vegan Soul Kitchen. w changes. The recipe seems to have a lot of ingredients but I add and subtract stuff at whim, it's really not a difficult recipe..though my dough didn't turn out as great this time..but that's dough for you

1 - Leftovers from Macaroni Grill (my mom took us out for lunch; not an auspicious start, I know. )
2 - Homemade veggie burgers (no recipe, and turned out pretty great!), tater tots and broiled green beans on the side
3 - Ate at Parents' - they brought in dinner (pasta & salad)
4 - Honeybaked Lentils with chopped yams, corn-on-the-cob from the garden (!!)
5 - West African Peanut Stew (from the freezer, woo-hoo!), fresh baked whole wheat bread and Peach-Plum Crisp for dessert.
6 - "Cheesy" Chickpea Shepherd's Pie. SO GOOD. Doubled the milk+flour in the recipe (tip from another MDC mom )
7 - Brown Rice Pasta with Fresh Tomato Sauce, leftover peach-plum crisp
8 - Went out. My laptop was practically destroyed last night (you wouldn't believe me if I told you) so while we were downtown getting it repaired, we grabbed food.

1-tomato soup, bread *dh did get lunch out for all of us

3-baked potatoes and chili *dh got us breakfast out
4-ham steak, roasted potatoes, carrots and peas
5-we were supposed to eat at my mom's but we're sick so dh and I had chicken noodle soup and bruschetta, the boys had chili dogs
6-fried potatoes
7-pancakes, sausage patties, apples
8-frozen pizza - was supposed to be sloppy joes but dh and I were out for awhile the kids wanted it.

Lurking here and I saw this- I had been looking for a new ethnic recipe to try and this sounds perfect- thanks for the idea. I am thinking of finally getting around to make some injera to go with this- I have found some recipes online that seem authentic but if you have one you use and are willing to share I am all ears.

3. Take out- DH had to run an errand that took him out near one of our favorite places, it's a little far so we don't get to eat there often, so he picked up dinner on his way home.
4. Almond Chicken stir fry over rice
5. Pizza (used up some leftover spinach and chicken as toppings, pretty good!)
6. Poor planning and staying out and about longer than we'd intended led to us getting hungry and picking something up while we were out.
7. Chicken apple sausage with pasta alfredo
8. Turkey meatballs and rice

Sure! The Honeybaked Lentils recipe originated here on MDC sometime, but it's posted here. Note: I always use brown lentils, because I like a thicker stew. Red lentils are good, too, but it will be much closer to soup than stew. As for the yams, I just added 2 med-small peeled chopped yams to the ingredients, and added maybe 1/4 C extra water to make up for the addition. You can certainly do this in the oven (as the instructions say) but I sometimes do it on the stovetop, and it takes about 40-45 minutes to be done.

This is fun! We used to eat out all the time, but we've had to make some major changes in the past few months and I'm really beginning to enjoy making dinner every night.

1. Japanese chicken curry with rice
2. Potato, bacon and onion frittata with salad and cheddar biscuits
3. Leftover curry over french fries (Not at all healthy, but yummy!)
4. Pork tenderloin medallions with mustard sauce, rice and green beans
5. Had a funeral that day, so leftovers
6. Roast chicken stuffed with lemon and onion, with potatoes and carrots
7. Spaghetti and leftover turkey chili
8. Frozen cheese pizza and salad
9. Casserole: leftover roast chicken, egg noodles, cheddar cheese soup & peas
10. Out to dinner with bereaved in-laws (it's necessary, but I'm already grudging the money before we spend it. Things are really tight right now. ) *ETA: BIL paid for dinner! He really didn't have to do that, it was so kind of him. Now we're in better shape for the week.

Sure! The Honeybaked Lentils recipe originated here on MDC sometime, but it's posted here. Note: I always use brown lentils, because I like a thicker stew. Red lentils are good, too, but it will be much closer to soup than stew. As for the yams, I just added 2 med-small peeled chopped yams to the ingredients, and added maybe 1/4 C extra water to make up for the addition. You can certainly do this in the oven (as the instructions say) but I sometimes do it on the stovetop, and it takes about 40-45 minutes to be done.

10- ate out (Mexican) on the way home from a short day trip. We did pack a lunch though. DH went out too. Until then he had eaten at his mom's or brother's this trip.

3. Take out- DH had to run an errand that took him out near one of our favorite places, it's a little far so we don't get to eat there often, so he picked up dinner on his way home.
4. Almond Chicken stir fry over rice
5. Pizza (used up some leftover spinach and chicken as toppings, pretty good!)
6. Poor planning and staying out and about longer than we'd intended led to us getting hungry and picking something up while we were out.

Snacky misc leftover night- we're doing a belated birthday party for ds this afternoon, I've got a bunch of munchy foods for the party (chips and salsa, fruit/cheese/cracker platter, etc) since the party is at 3, I don't think we'll be too hungry at dinnertime, but we can much on leftover party food or
whatever if we do get hungry.
