Also new to this thread, but totally need to be held accountable for cooking at home! We eat out entirely too much and so need to save!

1. Tempeh "bacon", tomato and spinach sandwiches with sweet potato fries
2. I've come down with Strep and had a late Dr's appt, so it's DH grabbing he and DD something. Damn...the best laid plans!
3. Free for all. I'm still sick so I think DH made them PBJ's. Not even sure!
4. Red beans and rice and cornbread. First time I've tried this recipe and it was soooo good!

This month I'm hoping to not rely on take out to much with all the holiday rushing.
Also hoping to make at least one new meal a week

Everything vegan

1. NEW MEAL/KEEPER!-Lemon rice,navy beans sauteed w wine, onions, garlic, tomatoes w carrot sticks/avacado/cukes
2. Falafel w broc/corn/carrot sticks/cukes-ds hadn't tried falafel in a long time and just kept saying mmm I like new things
3. NEW MEAL/KEEPER-Chickpea lemon noodle soup
4. Dh's night-Eggplant tomato sauce pasta w hemp seeds/peas & corn/ carrot/cuke slices
5. Work xmas party and the kids are w In-laws

I did this in Septmeber and October, slacked off (online) for November. But overall we have been doing great with eating out! Ate out a little more than usual last week since family was in town.

Dec 1- Chicken Cattiatore/Brown Rice
Dec 2nd- Pasta/Salad
Dec 3rd- Pizza from Whole Foods (Not eating out, but not cooking either)/Salad
Dec 4th- Tacos
Dec 5th- Chicken/Veggies/Rice

We're a family of eight, with six kids ages 9-2. Dh works out of town during the week fairly often, which means the kids eat a lot of cereal for dinner. Not good. I want to cut out the convenience meals/take out, and make real dinners for the kids and me even when dh isn't here.

1. Originally planned tacos, but the afternoon got away from me. Kids had cereal and fruit, I had a sandwich.
2. Pasta bake (ground beef, red sauce, rotini pasta, cheese over the top), salad, garlic bread. Tonight I made a double meal, because I brought a meal to a family in our church with a new baby girl.
3. Leftover pasta bake, garlic bread, veggies for kids; tofu stirfry for me
4. Dh and kids had chicken over salad; I had dinner out at my scrapbooking crop.
5. Nachos with beans and taco meat

1. Cioppino (Italian red seafood stew) with homemade bread & salad. I made a double batch of artisan bread in 5
2. Venison with onions & mushrooms, smashed red potatoes & white beans & kale
3. Shrimp Scampi over ww linguini & salad I'm also making a gallon of yogurt today!
4. Breakfast Pizza made from more of the artisan bread in the fridge
5. Scrambled eggs & toast
6. BBQ Ribs, baked beans from scratch ~making a huge batch, will freeze leftovers in meal sized portions. corn bread & salad

Giving Love serves as a wonderful reminder that we already have an abundance of Love within, "it is in giving that we receive."

1- Mexican Casserole my mom made with "veggie crumbles"- sooo not into it. I also made a soup with root veggies and noodles... both of these turned out pretty spicy because we used canned tomatoes with chiles and had no idea the generic brand was so hot!!
2- It was just Dahlia and I, and got a little late after grocery shopping, so I sauteed some kale and sweet potatoes together for dinnertime snack and then made oatmeal raisin cookies after she went to bed (from the Quaker lid.. not very impressive).
3- made a quinoa blackbean salad, angel hair with marinara... and black bean brownies.
4- black bean soup from Eat Your Colors... two days later, the large batch is almost gone! also I sauteed some sweet potato and kale together for our late snack, it was divine!
5- pot roast in the crock with carrots and new potatoes... repeated the sauteed kale, with regular potatoes this time.

so far so good!!
my mom declared we would eat out tonight but who knows, she could change her mind... seems likely, since we just got groceries.

planned:
quesadillas with a little beef and lentil red pepper dip
colcannon w/ sausage
stir fried beef and veg over rice noodles
polenta with sauteed bell pepper- fish perhaps?
mixed veggie soup with beef broth from roast, home made bread
spinach and sausage lasagna

Here's my list for the first week! The meals may not line up to the days we actually ate them (because I have a horrible memory) but this is what we ate. Also, we're (or at least I'M) eating lots of salad lately because my midwife is mean and makes me. Just kidding, she's cool. Actually, I found out that it's not that I never liked salad, it's that I've never had a good salad dressing. I made this one and I can't stop eating salad now! Just a tip though, cut back on the onion, and it also mellows out after the first day.
1: Oyakodon and Rice
2: Smothered Chicken with salad (recipe from the red Betty Crocker Cookbook)
3: Spaghetti with Meat Sauce, salad and garlic toast
4: Firecracker Salmon with rice and broccoli
5: Sausage Mushroom Penne with Mustard Cream Sauce and salad
6: Salisbury Steak, Mashed Potatoes, steamed green beans, and salad

ETA: just wanted to mention that 90% of the time our lunch the next day is leftovers from the night before. We love leftovers!

Wife to dh and mommy to dd1 (3/07), ds (1/10), and dd2 (any day now)!

This month I'm hoping to not rely on take out to much with all the holiday rushing.
Also hoping to make at least one new meal a week

Everything vegan

1. NEW MEAL/KEEPER!-Lemon rice,navy beans sauteed w wine, onions, garlic, tomatoes w carrot sticks/avacado/cukes
2. Falafel w broc/corn/carrot sticks/cukes-ds hadn't tried falafel in a long time and just kept saying mmm I like new things
3. NEW MEAL/KEEPER-Chickpea lemon noodle soup
4. Dh's night-Eggplant tomato sauce pasta w hemp seeds/peas & corn/ carrot/cuke slices
5. Work xmas party and the kids are w In-laws-we had a mixture of foods, curry, rice, salad, pad thai...lots of yummy vegan food
6. Pinto bean stew w corn dumplings. Garden salad and carrot sticks. Guac for on top and the bottom of the tortilla chips from the party last night for ds to dip. YUMMY!!!
7. Chickpea patties w roasted acorn squash and fried rice w peas/carrots/corn mixed in

Back on the wagon! We eat vegetarian around here.

1. Sweet Potato Lentil Stew (from Alicia Silverstone's The Kind Diet), spinach salad with vinaigrette
2. Black Bean, Sweet Potato and Kale Burritos with spelt tortillas, spinach salad with vinaigrette
3. Quorn piccata over brown rice (used this recipe as my base, added capers and kalamata olives)
4. Out. Used a Restaurant.com certificate though, so it was CHEAP!
5. Out. No excuse, other than feeling pregnant and depressed.
6. Lemon-Garlic (brown rice) Pasta, steamed kale and (frozen-thawed) fried tofu, with sesame dressing
7. Planned: Gimme Chimis (out of Eat, Drink and Be Vegan), guacamole
