Dec 3: Leftover eggplant/marinara sauce over pasta with seitan strips. Steamed frozen veggies. Home-baked cornbread muffins.
4: LOL! This may be a bad month to start this. MIL is coming to town and taking us out to dinner.
5: Quickie burritos
6: Apricot tofu with added broccoli (a little too sweet for my taste--I'll throw in a chili pepper next time!) Leftover cornbread.
7: Minestrone, leftover (frozen and thawed) cornbread muffins, vegan chocolate pudding.
8: "Breakfast" Burritos made from vegan scrambled tofu and salsa. Leftover vegan chocolate pudding.
9: Baby Ravioli with Cream, Mushrooms, and Peas (recipe from Quick Vegetarian Pleasures), steamed mixed vegetables

11: Out tonight. Family birthday.

Also new to this thread, but totally need to be held accountable for cooking at home! We eat out entirely too much and so need to save!

1. Tempeh "bacon", tomato and spinach sandwiches with sweet potato fries
2. I've come down with Strep and had a late Dr's appt, so it's DH grabbing he and DD something. Damn...the best laid plans!
3. Free for all. I'm still sick so I think DH made them PBJ's. Not even sure!
4. Red beans and rice and cornbread. First time I've tried this recipe and it was soooo good!
5. Tofu scramble from VWAV, Tempeh "bacon", WW & flax vegan Belgian waffles
6. Chickpea cutlets from V'con, roasted broccoli with garlic, Dreamy White Beans
7. Roasted vegetables with Field Roast Apple & Sage "sausage", idea taken from here.
8. Dinner Out! Dang it! Traffic was a nightmare, and we were running late. Noodles were great though!
9. Had a curry planned, but it's cold and rainy.....littles and I decided on breakfast for dinner: scrambled tofu and flaxseed waffles.
10. Steamed broccoli, carrot and green beans over brown rice with baked tofu and tahini-miso sauce.

This month I'm hoping to not rely on take out to much with all the holiday rushing.
Also hoping to make at least one new meal a week

Everything vegan

1. NEW MEAL/KEEPER!-Lemon rice,navy beans sauteed w wine, onions, garlic, tomatoes w carrot sticks/avacado/cukes
2. Falafel w broc/corn/carrot sticks/cukes-ds hadn't tried falafel in a long time and just kept saying mmm I like new things
3. NEW MEAL/KEEPER-Chickpea lemon noodle soup
4. Dh's night-Eggplant tomato sauce pasta w hemp seeds/peas & corn/ carrot/cuke slices
5. Work xmas party and the kids are w In-laws-we had a mixture of foods, curry, rice, salad, pad thai...lots of yummy vegan food
6. Pinto bean stew w corn dumplings. Garden salad and carrot sticks. Guac for on top and the bottom of the tortilla chips from the party last night for ds to dip. YUMMY!!!
7. Chickpea patties w roasted acorn squash and fried rice w peas/carrots/corn mixed in
8.NEW MEAL/KEEPER-A twist on veggie lo mein w eggplant, cabbage, mushrooms..dh and ds both loved it
9. Chickpea noodle soup-we just got a ton of snow and it seems like the proper meal Im using leftover noodles from last night that didn't get tossed into sauce
10. NEW MEAL-YUCK! made a navy bean salad with dill, tomatoes, lemon...not great. Had it with very bland ginger rice, roasteddill potatoes, peas and corn

Back on the wagon! We eat vegetarian around here.

1. Sweet Potato Lentil Stew (from Alicia Silverstone's The Kind Diet), spinach salad with vinaigrette
2. Black Bean, Sweet Potato and Kale Burritos with spelt tortillas, spinach salad with vinaigrette
3. Quorn piccata over brown rice (used this recipe as my base, added capers and kalamata olives)
4. Out. Used a Restaurant.com certificate though, so it was CHEAP!
5. Out. No excuse, other than feeling pregnant and depressed.
6. Lemon-Garlic (brown rice) Pasta, steamed kale and (frozen-thawed) fried tofu, with sesame dressing
7. Planned: Gimme Chimis (out of Eat, Drink and Be Vegan), guacamole
8. Macro inspired meal: Miso soup, quinoa and Tempeh Kabocha Squash Bake. Simple and yummy!
9. Leftover fridge cleanout!
10. Tofu "meatloaf", smoky collard greens, roasted cauliflower with lemon and capers

1. Cioppino (Italian red seafood stew) with homemade bread & salad. I made a double batch of artisan bread in 5
2. Venison with onions & mushrooms, smashed red potatoes & white beans & kale
3. Shrimp Scampi over ww linguini & salad I'm also making a gallon of yogurt today!
4. Breakfast Pizza made from more of the artisan bread in the fridge
5. Scrambled eggs & toast
6. BBQ Ribs, baked beans from scratch ~making a huge batch, will freeze leftovers in meal sized portions. corn bread & salad
7. Split pea soup ~made with the flavorful liquid from steaming the ribs, salad & more artisan bread
8. Venison/veggie burger for DD1, baked beans, roasted asparagus
9. WW pasta with (venison) meat sauce, salad
10. Out to eat Company Christmas party, FREE
11. Sliced hicken breast, oven roasted veggies & WW pasta
12. Dinner at work, Free or I'll bring leftovers

We're a family of eight, with six kids ages 9-2. Dh works out of town during the week fairly often, which means the kids eat a lot of cereal for dinner. Not good. I want to cut out the convenience meals/take out, and make real dinners for the kids and me even when dh isn't here.

1. Originally planned tacos, but the afternoon got away from me. Kids had cereal and fruit, I had a sandwich.
2. Pasta bake (ground beef, red sauce, rotini pasta, cheese over the top), salad, garlic bread. Tonight I made a double meal, because I brought a meal to a family in our church with a new baby girl.
3. Leftover pasta bake, garlic bread, veggies for kids; tofu stirfry for me
4. Dh and kids had chicken over salad; I had dinner out at my scrapbooking crop.
5. Nachos with beans and taco meat

6. Burritos, salad
7. Chili (shredded cheese, sour cream, kids had tortilla chips), orange slices
8. Hot dogs, corn, and yams
9. Eggs, toast, bananas for kids; leftovers for me
10. Cereal, fruit, peanut butter toast for kids; leftovers for me
11. Hamburger stroganoff with french-cut beans instead of pasta, cabbage stirfry
12. We didn't technically eat takeout tonight, but I did get a ready-made meal from the deli while grocery shopping this afternoon: a sub sandwich and potato wedges for the kids, along with baby carrots and some little cookies; rotisserie chicken over salad for dh; california rolls for me.

1- Mexican Casserole my mom made with "veggie crumbles"- sooo not into it. I also made a soup with root veggies and noodles... both of these turned out pretty spicy because we used canned tomatoes with chiles and had no idea the generic brand was so hot!!
2- It was just Dahlia and I, and got a little late after grocery shopping, so I sauteed some kale and sweet potatoes together for dinnertime snack and then made oatmeal raisin cookies after she went to bed (from the Quaker lid.. not very impressive).
3- made a quinoa blackbean salad, angel hair with marinara... and black bean brownies. Also repeated the sauteed kale with regular potatoes
4- black bean soup from Eat Your Colors... two days later, the large batch is almost gone! also I sauteed some sweet potato and kale together for our late snack, it was divine!
5- pot roast: in the crock with carrots and new potatoes... repeated the sauteed kale, with regular potatoes this time.
6- OUT for mexican food, an offer I couldn't resist!
the next three days, I might be off on exactly when we had what :P
7- Colcannon from The 5 Ingredient Vegetarian Gourmet, with polish sausages we got on mega sale plus coupon, yay.
8- stir fried beef, broccoli, kale, bell peper with a sweet orange sauce.. made both brown rice and rice noodles, both had off textures :P
9- beef and veg soup: the stock and small pieces of the meat from the roast, plus diced potato and plain old frozen mixed veg, easy and so super delicious! I made a batch of the basic recipe from Make Healthy Bread in Five Minutes a Day, wasn't ready in time for the soup but we've had a loaf and cinnamon rolls with it since then!
10- polenta with roasted bell peppers (also from 5IVG), baked tilapia

risotto with veggies tbd- inspired by the rice episode of Good Eats!

I am disappointed that we had a lot of bell peppers this week and because they are out of season we do not have organic ones available. Overall we've done as well as it seems can be expected... groceries for the first half of the month were around $250. I know this is higher than a lot of mamas, but after trying very hard to get it down I am pleased with this. We are in a high cost of living area, and we all like to overeat.

We've run into trouble with new-to-us recipes not going so smoothly. In the coming weeks, I will need to be responsible for all of the planning and cooking myself, because my mom is having surgery (thyroid removal :/). Everyone has aversions or demands, hers seem really impossible sometimes. It might be better that there will no longer be a diffusion of responsibility, I'll know it's up to me. Also her mom is visiting to help take care of her after the surgery, and I'm sure she will enjoy helping out with meals, or by playing with the baby so I can get stuff made.

This month I'm hoping to not rely on take out to much with all the holiday rushing.
Also hoping to make at least one new meal a week

Everything vegan

1. NEW MEAL/KEEPER!-Lemon rice,navy beans sauteed w wine, onions, garlic, tomatoes w carrot sticks/avacado/cukes
2. Falafel w broc/corn/carrot sticks/cukes-ds hadn't tried falafel in a long time and just kept saying mmm I like new things
3. NEW MEAL/KEEPER-Chickpea lemon noodle soup
4. Dh's night-Eggplant tomato sauce pasta w hemp seeds/peas & corn/ carrot/cuke slices
5. Work xmas party and the kids are w In-laws-we had a mixture of foods, curry, rice, salad, pad thai...lots of yummy vegan food
6. Pinto bean stew w corn dumplings. Garden salad and carrot sticks. Guac for on top and the bottom of the tortilla chips from the party last night for ds to dip. YUMMY!!!
7. Chickpea patties w roasted acorn squash and fried rice w peas/carrots/corn mixed in
8.NEW MEAL/KEEPER-A twist on veggie lo mein w eggplant, cabbage, mushrooms..dh and ds both loved it
9. Chickpea noodle soup-we just got a ton of snow and it seems like the proper meal Im using leftover noodles from last night that didn't get tossed into sauce
10. NEW MEAL-YUCK! made a navy bean salad with dill, tomatoes, lemon...not great. Had it with very bland ginger rice, roasteddill potatoes, peas and corn
11-Dh's night to cook...which means Take out thai
12-Leftover thai/potatoes from a couple days ago/carrot sticks/celery w peanut buter/cherry tomatoes

Back on the wagon! We eat vegetarian around here.

1. Sweet Potato Lentil Stew (from Alicia Silverstone's The Kind Diet), spinach salad with vinaigrette
2. Black Bean, Sweet Potato and Kale Burritos with spelt tortillas, spinach salad with vinaigrette
3. Quorn piccata over brown rice (used this recipe as my base, added capers and kalamata olives)
4. Out. Used a Restaurant.com certificate though, so it was CHEAP!
5. Out. No excuse, other than feeling pregnant and depressed.
6. Lemon-Garlic (brown rice) Pasta, steamed kale and (frozen-thawed) fried tofu, with sesame dressing
7. Planned: Gimme Chimis (out of Eat, Drink and Be Vegan), guacamole
8. Macro inspired meal: Miso soup, quinoa and Tempeh Kabocha Squash Bake. Simple and yummy!
9. Leftover fridge cleanout!
10. Tofu "meatloaf", smoky collard greens, roasted cauliflower with lemon and capers
11. Out. Used a good Restaurant.com GC though! mmmm...indian food...
