I figured since it is December now that we need a new home cooking thread.
Today I am making Roast Beef with potatoes and carrots in the Crock Pot for supper and eating left over home cooked lasagna for lunch.

I'm a newbie to this thread, so I'm not sure how it works - but this is one of my goals for the upcoming year. I want to make sure that we are eating at home unless we plan going out for special occasions... so this might be helpful. Do we post previous, current or future meals?

Tonight's meal is skillet cabbage casserole.

Also new to this thread, but totally need to be held accountable for cooking at home! We eat out entirely too much and so need to save!

1. Tempeh "bacon", tomato and spinach sandwiches with sweet potato fries
2. I've come down with Strep and had a late Dr's appt, so it's DH grabbing he and DD something. Damn...the best laid plans!

I did this in Septmeber and October, slacked off (online) for November. But overall we have been doing great with eating out! Ate out a little more than usual last week since family was in town.

Fell off the wagon at the end of last month - but seriously, my in-laws (who we were visting for several days) do NOT cook in the house - ever! We did our best with breakfast and leftovers, but seriously they don't even have the basics in their house.

Anyway! Back on the wagon! We eat dairy-free vegetarian around here.

I only cook gluten-free foods at home. We're a family of six: two adults, and four children ages 12, 10, 6 and 3.5.

11/30: Beef & onions cooked with garlic & taco seasonings with gf rotini pasta
12/1: Teriyaki chicken with peppers and white rice
12/2: Stir-fried rice with linguica sausage, bacon, egg, peas and green onions

This is my second week preparing meals from the 4 week meal plan I made to simplify my life. They are mostly crock pot meals. Yesterday I made pot roast and we discovered that it was good but neither of us were big fans of it so it will get replaced on the list with something better.
Today I am making cheesy chicken in the crock pot and I will cook some pasta to serve it over. I won't be cooking everyday, there are a few days that are for leftovers and I always have leftovers for lunch the next day. So far so good though. Less stree now that I just have to go to the meal plan to see what we are having for supper.

I'm going to try to join this for December! My DH works nights, so I prepare meals the night before he eats them (with the exception of crockpot meals now and then).

1) whole chicken in the crockpot...DH ate most of the white meat and then I took off the rest of the meat for
2) chicken rice soup! Only...I had no rice, so I was going to make soup with egg noodles, which I promptly left in the crockpot with the temp set on warm all night. Oops. So I woke up to a big crockpot full of chicken mush. Drat! Not sure what DH will come up with on his own (or maybe he'll order a pizza...) because I really need to go to the grocery soon.
3) Yep, DH ordered a pizza last night, which he will finish tonight for dinner. I'm having a big lunch at work today, so I'll probably just have some oatmeal or something this evening.

K + J = DS Evan 1/26/09 and happily welcoming DS Colin, our 9lb 5oz vbac.gif New Year's Day baby, 1/1/11!

I'll give it a try, as we spend too much eating out!

1. Broccoli Cheese soup and cheesy biscuits (Leftover takeout for me...oops)
2. Mac N Cheese for lunch, Pinto Beans, cornbread, and rice/veggies for supper.

I'd like to join. I'm really trying to get a handle on our food budget while ensuring DD and I are getting nutritious and delicious food.

1. shepherd's pie (ground turkey, carrots, onion, corn; topped with potatoes mashed with parsnip; topped w/ cheddar cheese)
2. chicken vindaloo from the crockpot (I'll cook it an hour less next time; the chicken got a little too squishy for my taste)
3. soup (onion/turnip/lentil/sunchoke for me; likely Progresso tomato for DD)
4. tuna salad and cheese toast
5. DD's birthday party so we'll likely be "off the wagon" for the celebration

We're a family of eight, with six kids ages 9-2. Dh works out of town during the week fairly often, which means the kids eat a lot of cereal for dinner. Not good. I want to cut out the convenience meals/take out, and make real dinners for the kids and me even when dh isn't here.

1. Originally planned tacos, but the afternoon got away from me. Kids had cereal and fruit, I had a sandwich.
2. Pasta bake (ground beef, red sauce, rotini pasta, cheese over the top), salad, garlic bread. Tonight I made a double meal, because I brought a meal to a family in our church with a new baby girl.

*you enter in what you have at home (I just went through the lists in the ingredient bar alphabetically and added what I have in my kitchen) and it searches through the online recipe sites for recipes that you can make with what you have! It will tell you "you have everything for this recipe!" or "you need butter for this recipe!" You can modify your search and ask it to only look for meat free, or gluten free (and others) recipes! I took the time to fill out what I have and it found 2000 recipes for me!!!!!! I have dreamed of something like this for so long!!!! I set a goal this week to cook everything from the ingredients I have! This website will make it possible!!!!!

My December dinners so far:
1-Curry chicken with broccoli and rice casserole
2- shredded pork, black bean and quinuo (sp?) burritos.
