Okay, I am officially stalking your menu.

I have mung beans that are sprouting like crazy at home... and a half a jar of Thai green curry sauce in the fridge. Whoa.

Well I have been eating home for the last couple of weeks. However if I do go on the road with my Dd sometimes I buy a kids meal at the fast food restaurant and something for myself too. Its not like we stay and eat in the fast food joint we bring it home and have our meal.

I'm in again this month! I'm pretty happy, Jan we only ate out around 4 times I'm hoping to do even better this month

1. Tofu green curry on rice noodles
2. Black bean soup w masa dumplings/corn/avocado
3. Roasted eggplant/hemp seed tomato sauce with kamut pasta w peas/carrot
sticks/cukes on the side
4. CURRY NIGHT!!! Eggplant curry, chana masala, red lentil dahl, roasted masala potatoes, curried rice..yum yum yum. I'll admit not as great as the curry place that we normally go to, but it was a nice way to use up leftovers

Feb 1--German night! DH made schnitzel and spatzle and green peas. Very good for never having made anything like it before.
Feb 2-- Mexican night--ended up with pork tacos
Feb 3-- Chinese night--had sweet and sour pork with lots of veggies and rice
Feb 4--not pork, maybe something Thai since we have fresh bean mung bean sprouts ready to go. We ended up with spagetti and red sauce and olive tapenade on bread. Italian night
Feb 5--pho so I guess it was Vietnamese night. DH and DS2 ended up at the Burger King playland for lunch too.
Feb 6--Thai lunch--end up with big meal mid-day and made Pad Thai with tofu the rest of the bean sprouts and leftover rice noodles.
Feb 7--DH has a giant ham in the crock pot. I am not sure if really for today or just for lunches for the rest of the month lol. DH thinks we should keep up with a different ethinicity for the rest of the month. I want to try to make injara and a eithopian dinner and he is talking about lefse and cod. I sort of doubt we can make a whole month, but so far it has been fun.
