Everything cooked at home is vegan... lunch is usually leftovers or FFY

1. (School night) Macaroni and cheeze & peas
2. Chickpea Cutlets, Mashed Potatoes/Gravy, Brussels sprouts.
3. (School night) Babah Ganoush, hummus, pita, stuffed grape leaves.
4. Lunch Out (spent the day out of town)/ Dinner: FFY
5. Baingan Bharta , over basmati rice
6. Chickpeas with Spinach over rice
7. I'm going to a vegan superbowl party, DH & DS1 will be FFY tonight (he is not interested in going with me).
8. (School night) Chickpea Casserole
9. Spinach Dal over rice
10. (School night) Creole "chik'n" and rice

1. Stir-fry made from left over chicken, cabbage and rice plus some soy sauce, toasted sesame seeds, and a chopped carrot.
2. Red lentil-curry-kidney bean soup
3. Leftovers
4. Thai coconut curry soup with tofu, cabbage, rutabaga and carrots, plus brown rice.
5. Leftovers
6. Stewed lamb and root veggies, boiled potatoes
7. Leftover meat and veggies in lemon-dill sauce made from broth
8. Nachos with black beans
9. Green lentil soup with root veggies and cabbage in bone broth
10. Fried potatoes, onions and canned salmon in butter and dill and parsley
11. Sweet potato oven fries and stir-fried tofu

2 - baked chicken, oven fries, salad
3- planned out to eat night (and hopefully the only one of the month!)
4- leftover chicken tacos
5 - more baked chicken (we have a lot of chickens in the freezer!), baked potatoes, veggies
6 - dinner at grandparent's house
7 - taco bell ugh
8 - spaghetti
9 - tamale casserole
10 - chicken and black bean enchiladas
11 - Jamaican beans and rice, salad

Should have posted that we eat vegan at home. The very odd egg might enter the picture

1. Tofu green curry on rice noodles

8. Tofu green curry on rice noodles-Seems to be the quick go to meal for Mondays
9. Gumbo and cornbread muffins
10. Leftover gumbo/roasted potatoes/peas/bok choy
11. Pasta w chickpeas/spinich/tomato and an avocado sauce, kinda like an alfredo. Needed more garlic

I am also using this for a pantry challenge, trying to clean out my freezer and use stuff from the pantry before I go buying more stuff.

1. stir fry of some kind...chicken with bok choy
2. tortellini with tomato sauce from jar, salad
3. chicken, sweet potato fries, salad
4. leftover chicken tostadas
5. pizza
6. out to mexican but used a coupon
7. super bowl party at FILs
8. spaghetti squash, chicken
9. cooked roast had wraps
10. rest of roast with potatoes and veggies
11. rotisserie chicken from costco veggies
12. chicken pot pie?

1 Left over chicken chili and chips (I didn't even have to make it, a friend dropped it off Thanks Angel!)
2 Homemade Moo Shu Chicken and it was quite excellent to make it gluten free do not use hoisin sauce and only use La choy soy sauce
3 Roast with onions and mushroom with mashed potatoes and mixed vegetables
4 Black Bean Burgers with Homemade Fries
5 Vietnamese out $22.00 with Homemade Gluten free Chocolate Cake with Marshmallow Frosting (elana's pantry)
6 Portugese Pork Chops and sauteed Spinach and Homemade Chocolate Chip cookies for DP **NOT Gluten Free** She says they are the best ever and I really am lacking at the chocolate chip cookie baking
7 Superbowl Party!!! We had wings, Homemade crabcakes, Nacho dip and salad.
8 We ate a late lunch out... $15.00 and really didn't eat dinner.
9 Breakfast for dinner (I think, I can't remember)
10 Hot Dogs with Mashed Potatoes and bacon
11 Indian Buffet $22 for lunch and snacks for dinner
12 Crockpot Stew for lunch probably snacks for dinner

Freezer update...
Well one of the reasons we wanted to do this was to eat some of the stockpile so that we had room to add organic/free range chickens and to eat up the 1/4 of grassfed beef. We are actually moving on the beef and I have been working on some of the other items. I am planning to take some time soon and organize the freezer and make it more user friendly... so I don't have to climb in it to find things My goal is to complete it by the end of the month.

Feb 1--German night! DH made schnitzel and spatzle and green peas. Very good for never having made anything like it before.
Feb 2-- Mexican night--ended up with pork tacos
Feb 3-- Chinese night--had sweet and sour pork with lots of veggies and rice
Feb 4--not pork, maybe something Thai since we have fresh bean mung bean sprouts ready to go. We ended up with spagetti and red sauce and olive tapenade on bread. Italian night
Feb 5--pho so I guess it was Vietnamese night. DH and DS2 ended up at the Burger King playland for lunch too.
Feb 6--Thai lunch--end up with big meal mid-day and made Pad Thai with tofu the rest of the bean sprouts and leftover rice noodles.
Feb 7--DH has a giant ham in the crock pot. I am not sure if really for today or just for lunches for the rest of the month lol. DH thinks we should keep up with a different ethinicity for the rest of the month. I want to try to make injara and a eithopian dinner and he is talking about lefse and cod. I sort of doubt we can make a whole month, but so far it has been fun. We had wings and chips and guac.
Feb. 8--ham and bean soup and some really good cornbread muffins.
Feb. 9--frozen pizza
Feb 10--steak, green beans, and potatos (and we went to a coffee shop for some local music and had desert too--$6)
Feb 11--went out for mexican with a coupon and spent $22
Feb 12--soup with chicken broth, chickpeas, onions, carrots, garlic, pasta and cherizo

I should really do this - we only ate out about 3 times last month as we're on a major finance/health thing since Christmas. I've also made a load of lunches and breakfasts from scratch - does that count too?!:

1/2 Spaghetti bolognase
2/2 Fish tacos
3/2 Spinach and ricotta ravioli with mushroom sauce
4/2 Chicken madras curry with brown rice, raita and mango chutney
5/2 Squash soup with home made bread
6/2 Take out: Burritos/Sopes
7/2 Roast chicken with parsnip puree, broccoli and gravy
8/2 Baked cod sweet potato chips (fries), peas
9/2 Grass-fed beefburgers with cheese, home-made burger buns and pickles
10/2 Thai green chicken curry and brown rice
11/2 Shrimp tacos; peach crisp for dessert
12/2 Boiled eggs and "soldiers" (hot buttered toast with Vegemite, sliced)
13/2 Chicken breast with parmesan crust, salad, home-made rolls
14/2 Butternut squash ravioli with mushroom cream sauce

I went through my recipes, cupboards and freezer last night and planned out all of March's meals. We will be going out of town for a couple days but other than that, we should be able to clear out the freezer a bit.

Goal - eat out 1x dinner this month.


February

1 - Flank Steak with sauteed asparagus and mashed potatoes
2 - Speghetti with Meatballs & homemade garlic cheese bread]
3 - Grilled Cheese & Tomato Soup
4 - Tri-Tip steak with rice & sauteed baby bok choy
5 - Take & bake pizza for the boys & rice & beans for me
6 - Homemade pizzas at friends house
7 - Quesadillas (beef/bean, cheese) & chicken wings (for DH)
8 - Grocery Shopping, but grabbed chicken from the deli & with sides
9 - Brinner for Dinner (for the boys), meeting night for me FFY
10 -Chinese Take out for dinner
11 - can't remember, so wasn't that great of a dinner
12 - Homemade pizza & Meatballs with homemade sauce over fresh spinach
13 - Leftovers night/clean the fridge out
14 - Flank steak with mashed potatoes, & fresh spinach salad

1 Left over chicken chili and chips (I didn't even have to make it, a friend dropped it off Thanks Angel!)
2 Homemade Moo Shu Chicken and it was quite excellent to make it gluten free do not use hoisin sauce and only use La choy soy sauce
3 Roast with onions and mushroom with mashed potatoes and mixed vegetables
4 Black Bean Burgers with Homemade Fries
5 Vietnamese out $22.00 with Homemade Gluten free Chocolate Cake with Marshmallow Frosting (elana's pantry)
6 Portugese Pork Chops and sauteed Spinach and Homemade Chocolate Chip cookies for DP **NOT Gluten Free** She says they are the best ever and I really am lacking at the chocolate chip cookie baking
7 Superbowl Party!!! We had wings, Homemade crabcakes, Nacho dip and salad.
8 We ate a late lunch out... $15.00 and really didn't eat dinner.
9 Breakfast for dinner (I think, I can't remember)
10 Hot Dogs with Mashed Potatoes and bacon
11 Indian Buffet $22 for lunch and snacks for dinner
12 Crockpot Stew for lunch probably snacks for dinner
13/14 on vacation in Brooklyn NY

1-dinner at my mom's *dh and ds2 had lunch out
2-stir fry for dh and I, taquitos for the kids
3-bacon, waffles, applesauce
4-steak, baked potatoes, salad
5-pizza night
6-out, but mil bought
7-pork chops, twice baked potatoes
8-I had broccoli cheese soup and a grilled cheese, boys had chili dogs and dh had leftovers
9-trout sandwiches, fries, carrots
10-leftovers *dh ate dinner out
11-out at ds1's basketball game
12-pizza night
13-chili dogs, fries
14-penne with vodka sauce, garlic bread and a pink vanilla cake for dessert

Feb 1--German night! DH made schnitzel and spatzle and green peas. Very good for never having made anything like it before.
Feb 2-- Mexican night--ended up with pork tacos
Feb 3-- Chinese night--had sweet and sour pork with lots of veggies and rice
Feb 4--not pork, maybe something Thai since we have fresh bean mung bean sprouts ready to go. We ended up with spagetti and red sauce and olive tapenade on bread. Italian night
Feb 5--pho so I guess it was Vietnamese night. DH and DS2 ended up at the Burger King playland for lunch too.
Feb 6--Thai lunch--end up with big meal mid-day and made Pad Thai with tofu the rest of the bean sprouts and leftover rice noodles.
Feb 7--DH has a giant ham in the crock pot. I am not sure if really for today or just for lunches for the rest of the month lol. DH thinks we should keep up with a different ethinicity for the rest of the month. I want to try to make injara and a eithopian dinner and he is talking about lefse and cod. I sort of doubt we can make a whole month, but so far it has been fun. We had wings and chips and guac.
Feb. 8--ham and bean soup and some really good cornbread muffins.
Feb. 9--frozen pizza
Feb 10--steak, green beans, and potatos (and we went to a coffee shop for some local music and had desert too--$6)
Feb 11--went out for mexican with a coupon and spent $22
Feb 12--soup with chicken broth, chickpeas, onions, carrots, garlic, pasta and cherizo (DH went out with some friends)
Feb 13--homemade ice cream--chunky monkey (my contribution to dinner at friend's)
Feb 14--steak and lobster, garlic mashed potatos, steamed veggies (brocilli, carrots, and red pepper) plus cheap sparkling wine. The steak was leftover and the lobster tails were only $6 total. DS2 and I had fun setting the table with the good china and candles too. Even the kids seemed to enjoy the "fancy" aspect of it.

Everything cooked at home is vegan... lunch is usually leftovers or FFY

Using things up in the freezer/pantry. This is week 3 of spending only $15 on food.

1-Chicken patties, oven fries, carrot sticks, pineapple
2-tuna noodle, peas, pineapple
3-McDonalds (we are selling the house and had to leave the house spotless for a showing at 6pm)
4-sloppy Joe on toast, leftover oven fries, corn
5-pinto beans, corn bread, peaches
6-pigs in a blanket, tater tots, green beans
7-mac and cheese, sloppy Joe meat, peaches, green beans
8-refried beans with cheese (leftover pintos), Spanish brown rice, applesauce
9- homemade chicken soup, whole wheat rolls, pineapple
10-pork chops, sweet potatoes, broccoli
11-black bean soup with leftover rice, peaches, carrot sticks
12-spaghetti, green beans, rolls
13-pizza at church, no charge, but I brought cookies
14-leftover bean soup, cornbread muffins, peaches
