Great thread!

Last night and tonight- Curry Lentil Stew over rice

Tues- Baked potatoes, soy topping with broccoli and fruit on side

Wed & Thur.- Taco Soup

Fri- Quiche with citrus fruits

Sat- ?? need an idea as in-laws coming for dinner

Sun- Veggie Burgers, spinach and sweet tato fries

12/3 burrito style enchiladas
12/4 pigs in a blanket (applegate farm dogs in homemade dough wraps) with french fries, salad
12/5 goulash - not really goulash, but my MIL hill-billy take on it, green beans, homemade rolls
12/6 leftover "goulash", green bean, rolls
12/7 baked tilapia, cous cous, peas
12/8 baked potatoes with nut yeast sauce, broccoli, boca crumbles, salad, steamed carrots
12/9 leftovers
12/10 DH's holiday party. Not cooking and not spending any money!!

12/12 Christmas Party Potluck We took black bean hummus and pita chips and also some df chocolate chip cookies

Tomorrow is ds's birthday. All along we planned on eating out, but tonight we decided that we will eat a fun family birthday dinner at home!

tonight we had veggie chili (made in the crock pot this morning) with homemade cornbread

thur- leftovers

fri- fish with brown rice and veggies

sat- (left over) fish tacos & salad

sun- sweet potatoes with tofu, veggies, and mushroom gravy

We had a couple of crazy, drama-filled days the middle of this week, so fell off track; I  don't remember what we did Monday or Tuesday, except that Monday was home and I'm pretty sure Tuesday was out.  Weds. we got subs.

 

Thursday: Italian sausage bread/salad

Today: ?? but it will be at home...made two soups (broccoli & squash) so far today, so maybe those with more sausage bread...or regular bread, if I get around to it.  We have planty of leftovers, we'll figure something out.

 

Don't have the weekend planned at all right now.  Lots of post-baby meals in the freezer - we won't be surprised if we meet him this weekend - so that may become the plan!  Otherwise, I expect we'll do simple meals - pasta/sauce, soup/grilled cheese, egg scrambles, even just cheese & crackers & raw veg, depending what we feel like.

well another week has passed and we have done well, my van died on the weekend unexpectedly so now more that ever we need to eat at home at save every penny. this week dh is home so he will be doing alot of the cooking but we did the tentative plan together.

 

12-19 chili and buns

12-20 salmon, brown rice, and green beans

12-21 yam and brown rice cakes

12-22 spanokapita

12-23 soup using any leftovers

 

we are off to MIL's house for next 5 days where she is looking forward to cooking for us!

12-17 boys and I went out-- DH was out of town

12-18 ham and vegges

12-18 salad and scalloped potatos and ham (ham loving DS1 said he's tired of ham. I think the rest is going in the freezer)

12-19 DK

 

Honestly, I think my lack of resturant choices in my current location drives me to eat at home plentywinky.gif.  I think I need more of a menu planning thread so we don't keep it inspired and unboring while using up what's in the pantry.

Have to admit I haven't done the best this month...holiday times always seem to through me for a loop!

 

Did do homemade Pad Thai yesterday and dinner is already in the crock pot for today (vegetable barley stew). Button and I are flying out to visit family for Christmas tomorrow...so will just have to hope there's enough leftovers for hubby while I'm away :)  (He's also kind of spoiled...he can go to his parents any time).

 

Hoping to see this continue into the New Year...if I don't get back before then hope everyone has a wonderful holiday!

Tonight: Veggie spaghetti (mushroom and zucchini plus I blend up a carrot or two into the sauce to get a little more nutrition in there).

Yikes- I am behind!!

 

We went away for the last 6 days so ate some on the road-crap but also had awesome meals at the relative.  All in all we probably spent less then if we had stayed home and I had to grocery shop.

 

Tonight: roasted pork loin with cumin/marmalade glaze, cauliflower and basmati rice

Tomorrow (xmas eve!): meat fondue, homemade bread, mixed green salad, champagne!

Saturday (xmas!!): dinner at a friends, we are bringing salad and baked brie

Sunday: roast turkey breast and all the trimmings

Monday: leftovers-maybe turkey potpie??

Well the storm here put a crimp in our plans.  Spent Sunday afternoon sledding as the storm approached and then had snack at a friends, no "real" dinner.  Monday was a wash, digging out from over a foot of snow, an afternoon of sledding, then simple omelets for dinner.  Here is how the rest of the week plays out....

 

Tonight: mix match of different leftovers both in the fridge and in the freezer.  Finally made it to the grocery store today but still want to clean out the fridge

Tomorrow: finally get our roast turkey dinner with all the fixins

Thursday: Turkey pot pie

Friday (New years eve!!): we have no plans this year so kind of lonely greensad.gif  thinking some good comfort food.  Maybe meatloaf??

we got back last night and need to go shopping today. planning to have the following over the few days until months end...

 

12-28 we had ww rotini with roasted tomato and garlic sauce with pureed spinach and onions(that unknowingly went in the sauce without notice)

12-29 homemade veg pizza (will be buying premade crust) kids and dh may add some homemade pepperoni

12-30 roast chicken with mediteranean quinoa salad

12-31 oil and cheese fondue (it would probably be cheaper to eat out!)

 

I enjoy seeing what others are eating for dinner and this really pushes me to plan my meals (as well as minimizing eating out) love it!
