Last night's dinner was meat (tri-tip steak) browned in the cast iron saucepan, then I dumped in onions and carrots and water and stuck it in the overn, then when it has boiled down I took out the food and made gravy from the remaining liquid. 

 

My children won't each such stuff, of course, so they had mac n' cheese and fruit, but for DH and I it was pretty darn easy and pretty darn cheap. 

 

We've been totally out of commission here with colds and fever, and MIL has been dropping by fresh fruit and milk, so it sort of turned into an unwitting pantry challenge. Back to the grocery store today!

FRUIT WAFFLE RECIPES

(I originally found these recipes in "Vegan with a Vengeance", but I have modified them to fit our tastebuds.)

 

 

Ginger-Pear Waffles (vegan)

2 c flour

2 tsp baking powder

1 tsp baking soda

1/2 tsp salt

2 tsp ground ginger

1/2 tsp cinnamon

1/4 tsp allspice

1/4 tsp nutmeg

3/4 c apple juice

1/2 c milk

1 c pureed pears

2 Tbs oil

4 Tbs sugar

2 tsp vanilla

1 slightly under ripe pear, grated

 

Preheat waffle iron.  Combine first 8 ingredients in a large bowl.  Combine next 6 ingredients in another bowl.  Add to flour mixture and stir until just combined.  Drop batter 1 1/2 cups at a time onto hot, greased waffle iron.  Cook until golden brown.  Serve hot.

 

 

Apple Waffles (vegan)

2 c flour

2 tsp baking powder

1 tsp baking soda

1/2 tsp salt

1 Tbs cinnamon

1/4 tsp allspice

1/8 tsp ground cloves

1/8 tsp ground ginger

1/8 tsp cardamom

4 Tbs sugar

1 c apple juice

3/4 c soymilk

2 Tbs oil

1/3 c applesauce

1 Tbs vanilla

1 1/2 c chopped apple

 

Preheat waffle iron.  Combine dry ingredients.  Combine liquid ingredients and add to flour mixture.  Stir till combined and fold in apples.  Drop batter 1 1/2 cups at a time onto hot, greased waffle iron.  Cook until golden brown.  Serve hot.

Tonight: whole wheat biscuits with gravy, eggs for me, bacon for Chris, fruit, and veggies. For breakfast we had the baked oatmeal from this page and it was very tasty! /

Edit - changed my mind! I'm making whole wheat cheese biscuits and soup (can o' black beans, 1/2 a mild taco seasoning packet, brown rice, carrot, corn, chicken broth...I just threw it all together and hope it turns out ok).

Tonight is three bean soup. It's one of those jar mixes. I made one for my SIL and had enough leftover to make a few extra jars which I kept for myself for a lazy-dinner today. Today I spent the day putting away christmas stuff and cleaning so dinner was not in my plan. Glad I had this on hand!

For me, breakfast was a cheese omelet, lunch: baked bean quintet, and dinner: classic chili. Snacks: apple, banana, chocolate milk, 2 slices bacon
For the kids, they had peanut butter sandwiches for lunch and DH made pancakes and bacon for dinner. They also have breakfast and lunch at pre-K. Rayne ate a cheese omelet with me.

Jan. 4. eat.gif Another home cooked meal! I sauted an onion and a green pepper with a little cumin and paprika  and lentils and will make some quesadillas! I've never really used lentils before. They smell good and taste yummy so far so I'll probably make them again sometime.

Dinner- Cowgirl Beans, Veggie Chilli, Turkey Meatloaf, Red beans and Rice, Tortilla Soup

Lunch- Hard Boiled Eggs/Deviled Eggs and Salad, Left overs, Luncheon meat and Tortilla roll ups

Snacks- Popcorn, dried fruit/nuts, yogurt/fruit,veggies

 

We don't drink juice and milk is only for breakfast or dinner, otherwise water it is.

 

This is our menu starting today and going until next weds. I need to plan another weeks worth of meals, since I like to shop for 2wks of groceries.

 

Week 2

Dinner-Potato,Cabbage, Ham Soup, Veggie Lasagna, Veggie Soup, Frittata, Leftovers

Lunch-PBJ, Yogurt, Leftovers

 

I am dairy free, so learning to sub ingredients is a work in progress. I plan to purchase a yogurt maker, and bake bread more often. The above ideas involve making extra of certain things- like double batch of rice, turkey/hamburger cooked up, big batch of eggs. Should keep me out of the kitchen :)

MamitaM - lentil quesadillas sounds good - I will have to try that!

 

So we totally suck...I have been so sick the past several days and it is just getting worse. :(  hubby made veggie chili last night, but we stopped at a burger joint tonight on the way home from the doctor. At least it was on the cheap side! 

 

Hoping to feel better tomorrow and get back on track...

I'm good so far! We had coffee at Tim Horton's this morning, but only because we had a gift card. smile.gif
Tonight, I'm going to dinner with a bunch of moms and I already told them that I'm going for company not food. This is mostly because I'm not spending money and I'm counting calories.

Yay I cooked at home tonight! Veggie stir fry - very tasty. We should be on track for the rest of the week, as hopefully will continue feeling better.
