Temps have been subzero here and I live in an 100+ yr old drafty house. Putting up window plastic today but there is ice inside my windows in the house. The windows are drafty and large like 60x120. Temps wont rise above the freezing point till almost summer and we should be moved out of here long before then but Dec/Jan are the coldest months of the year. Mold shouldn't grow if I just put up the plastic over the ice right? The house is most likely being torn down in a couple months when the ground thaws and we will be moving so not to worried but I do have to leave the place clean even if they are tearing it down if we want our deposit back which would mean no mold. Mold doesn't grow in sub freezing temps right?

I think you should be good.  If it's that drafty, it's not like the moisture won't be able to get out anyway.  It just won't get IN the house.
