I got a great deal on organic carrots but it is waaay more than we can eat in the next week or so - can I freeze them? Use freezer bags?

need some advice - my DS and DH loove carrot casserole and I don't want to waste these yummy gorgeous carrots!

I don't see why not. I had some organic carrots that were just about to go bad so I shredded them, put them in 2 freezer bags and put them in the freezer, I've used one of the bags and it was fine

Would you give your recipe for carrot casserole? For some reason I've only recently started to really like cooked carrots and would love some recipes.

They sell them frozen at the store! Maybe slice and freeze? Or maybe blanch and freeze? Sounds yummy!

You need to blanch them first before freezing. Otherwise the carrot does a chemical reaction that just doesn't taste as good as fresh. It's not a *huge* taste difference, but enough that I don't bother freezing carrots anymore. (Although it does help that currently our garage is 35 degrees with 85% humidity so I can leave carrots out there no problem...)
