Thanks! Yes...we got home the day before Christmas and we went Tuesday back for a checkup....she got a clean bill of health. Scary time having a day day old with pneumonia...but great to have that freezer stash of food. I didn't have to worry about what the rest of the family was eating at home. I feel more now than ever that keeping that freezer stocked and a good meal plan ready....for emergencies is essential.

subbing! One of my goals for 2009 is to get better at meal planning. I'm doing good so far. Got a refrigerator pad that I can jot down lunches for me and dinners. I'm doing good so far. I figured out that I forget what I planned. I have some kind of aversion to writing it down. My mother never did that, but she was not a stellar cook or housekeeper. It's taken me a long time to figure out it was OK to write it down. It's totally helpful for me to see what you guys plan, too.

I have to change my meal plan. Well, not change, but, I guess just get rid of a couple of days...we have way too many leftovers (ham, chili, shredded BBQ chicken), due to DH's work (he just stayed at work last night, had to go across state today, and they just issued a "no travel" directive b/c of weather, so, he's staying overnight at his destination tonight).

I already had the brisket cooking, and, really, it was defrosted, so, it needed to be cooked regardless, but I'm getting rid of the pasta w/PB sauce and the pierogies.. Those were utilizing mostly pantry/frozen items anyway....I'm working tomorrow and Thursday (my boss told me not to come in today b/c of the predicted horrible freezing rain), but, I'll bring at least my lunch, and maybe DDs, those days. I nanny, so, we usually eat my boss' food - but, I can't see wasting perfectly good food. Plus, my stuff is usually healthier... :

I don't want to plan through the rest of the month yet, b/c I'm not sure what will be hanging around on the 20th...it may just be a few days of re-dressed leftovers and a couple pantry/freezer meals. It'd be great if I don't have to do shopping other than dairy/produce...we'll see.

We're back to just keeping our fridge, freezer, and pantry well stocked rather than actual meal planning. Right now we have close to 60 pounds of venison (sausage, tenderloins, and deerburger) in our freezer, so we're doing a LOT of deer chili and deer steaks!

I made a big decision about meal planning the other day. I'm not planning lunches anymore. My DH works from home and has for a few years. For those years, I planned all the lunches and dinners. But I decided it was too much and I didn't want to do it anymore. I asked DH and DD what kinds of things they wanted on hand for lunches and added those to the grocery list.

And this week, I'm trying something different...something I've seen other moms here do. I wrote down five meals and posted them on the fridge. DH went shopping (yah!) and got all the ingredients for those meals and all our lunch stuff. Now, we just pick what we want for the night.

So here are the five meals:

1. baked chicken, lemony couscous with chickpeas, large green salad with avocado and strawberries

2. curried cauliflower and chickpea soup, spinach cheese burritos, fruit salad

3.pork chops marinated in soy sauce and ginger, pineapple slices, udon noodles with green onions, miso-glazed eggplant (we had this last night. GOD the eggplant was good!!!)

4. creamy lemon pasta with nuts and parsley, baby greens and pecans and pears, crusty bread (tomato and basil topping for me)

5. lentil soup, corncakes, broccoli salad (with tomatoes for me)

And then one more cuz I realized I needed to use up some stuff:

6. tortellini carrot and bok choy soup with turkey, toasted broccoli cheese melt, apple slices

MamaGwynn, thanks for that link to sassy spaghetti, it's on my menu for Saturday now.

I so need this thread, I have been trying for hours to come up with ideas for the week. Usually I can come up with stuff, but today it's just not working. I feel like I'm in a rut and SO BORED with what I'm cooking. If I'm not interested, if I'm not enjoying it, I resent my family for expecting me to cook and become quite pissy. It's much better all around if I can plan ahead and enjoy what I'm cooking.

Everything I cook has to be vegan and gluten-free. I think part of what I'm feeling is envy at reading what everyone else has posted and seeing how all the varied ingredients you get to use. Anyway, here's what I have for the next week:

Su--black bean soup, cornbread, sauteed chard
M--baked tofu, crockpot stuffing, maple-glazed carrots, salad
Tu--lentil & rice tostadas, avocado salad
W--baked potatoes (choice of white or sweet), roasted broccoli, salad
Th--blackeyed pea pie, sauteed kale
F--pinto bean soup, cornbread, salad
Sa--sassy spaghetti, salad, steamed green beans

blah. Hoping for inspiration.

I'm so happy to be back on the meal planning bandwagon! I did mine today for this week through Feb. 14th because the kids and I are going out of town after that. I figure I'll do extra of some stuff so I can leave things in the freezer for DH while I'm away. All vegetarian stuff except for Valentine's day too (DH eats vegetarian 363 days a year generally--but we always do seafood on Valentine's day and turkey on Thanksgiving.) :

Monday 1/12 Philly cheese "steak"
Tuesday 1/13 Black bean cakes; herbed quinoa
Wednesday 1/14 Sweet potato risotto
Thursday 1/15 Pumpkin soup and rolls
Friday 1/16 Broccoli and cheese topped baked potatoes and cranberry salad
Saturday 1/17 Chickpea pasta
Sunday 1/18 Scrambled eggs and toast

Monday 1/19 White bean and avocado sandwiches
Tuesday 1/20 Barley soup
Wednesday 1/21 Eat out

To those of you who plan out so far in advance...how do you do it? I used to know how to do it, I would plan out a month in advance, but now it's all I can do to come up with a meal plan by Tuesday of the week I'm planning! Do you have specific days for soup or Mexican or casserole or whatever? I'm thinking about just making a different kind of soup every day for dinner. Some days we could have rice with it, other days some kind of potatoes or tortilla chips...yeah, I'm thinking this could work! At least through the winter.

Homeschooling mom to four kids, ages 18, 18, 10, and 6.
