Last night, I made some sort of "pad thai." Overestimating, how much I would need, I made the whole package of rice noodles/sticks, But I only used about half with the pad thai. What else can I do with these already cooked noodles? I don't want to make another "pad thai"/stir fry type of dish-- is there anything else that I can make with them within the next few days, before they go bad? I don't think I can freeze them for next week.
Hmm... Vietnamese summer rolls, or a salad made with similar ingredients would be my choice. I usually fill them with some combination of lettuce, noodles, shredded carrots, cucumber, avocado, chicken, shrimp, pork, tomato, sugar snap peas, bell pepper, etc. (really whatever is lying around and might taste good)
