I just did this week's meal plan and shopping. About to start making quiches, zucchini bread, and samosas for the freezer! I put empanadas in there last night. I'm glad they're done, and I won't be making more for a long long time. Every time I do empanadas or calzones, I end up fighting with the dough for a long time and getting :

This week's menu is:
Sun 5/31: Curried butternut squash soup and potato samosas; salad with goat cheese (the rest of the goat cheese is going in the quiches)
Mon 6/1: Gnocchi with diced sweet potatoes and parmesan; poppy seed rolls
Tues 6/2: Falafel and quinoa-broccoli-feta salad
Wed 6/3: Spaghetti with tomatoes and white beans and parmesan; zucchini bread
Thurs 6/4: Goat cheese-veggie quiche; poppy seed rolls
Fri 6/5: Black bean cakes and quesadillas
Sat 6/6: Chickpea curry over rice; zucchini bread
Sun 6/7: Raspberry mock chicken and multigrain pilaf (looks like fun from Trader Joes, with couscous, chickpeas, rice, a whole bunch of stuff)

Happy with my DH, 2 kids, dog, fish, and frogs

We are having zucchini bread this week, too. Got some awesome zucchini at the farmer's market.

I finally just finished my June plan. Better late than never. I have been trying to do a month in advance. Sometimes things get moved around a little depending on work schedules but mostly it sticks. This way I only plan for things I have or know I am getting at the store/co-op.
We also build in 1 day a week that is for left overs. The rest goes to lunches.
This month there are about 4 new recipes to test out. I am learning to cook more vegetarian so I am trying to challenge myself a little to move beyond rice and beans

And Eviesmom- I totally stole your Gnocchi idea. We haven't had that forever and DH loves it.

Potato samosas
(Real Simple: http://www.realsimple.com/food-recip...637/index.html)
I had leftover mashed potatoes, so I did that instead of store bought refrigerated mashed in a bag. However, this made enough for 18 samosas, not 12, easily… I made 1 less quiche and more samosas. I hope they freeze well! I also made a few with no curry, just mashed potatoes and peas for DD.

Quinoa, broccoli, feta salad
I toss whatever veggies, cheese and grains or pasta that I have or sound good together with this really simple dressing.

2 tablespoons olive oil
1 tablespoon red wine vinegar
1 tablespoon lemon juice
½ teaspoon salt
½ teaspoon pepper

Quiche
(via Hillbilly Housewife: http://www.hillbillyhousewife.com/quiche.htm)
The ones in my oven have shredded goat mozzarella from Trader Joes, and onion and summer squash that were about to go bad from last week. And a few cherry tomato slices on top; these were like $3 each to make even NYC prices and pre-made pie crusts! I was impressed!

Black bean cakes
(via my MIL; the ones we're eating this week are the last of a batch from the freezer)
3 cans of black beans
2 large eggs
3 cups breadcrumbs
1 cup chopped red bell pepper
½ cup chopped green onions
Garlic
Chili powder
Cumin
Black pepper
Olive Oil
Salsa, sour cream, avocado slices.

Directions: Puree 2 cups of black beans with eggs in processor until smooth. Transfer to large bowl.
Stir in remaining beans, 1 1/4c. breadcrumbs, and next 10 ingredients.

Shape mixture into ten 1/2 inch-thick-patties, using about 1/2 c. mixture for each. Transfer patties to baking sheet. (Can be prepared 4 hours ahead. Cover and Chill)

Coat black bean cakes on both sides with remaining breadcrumbs. (This is when I freeze them)

Heat 2 tablespoons oil in each of 2 heavy large skillets over medium heat. (We used one big pan but I think you have to be careful to brown the bottoms but also cook long enough to warm it through.)

Add 5 cakes to each skillet; cook until golden brown, about 3 minutes per side. Transfer to plates.

Serve topped with salsa, sour cream, and avocado slices.


Chickpea curry
(via a mom on MDC but I always forget to write down who!)
1 small can Coconut Milk

1 heaping tsp. ginger

1 1/2 tbsp. curry powder

Couple pinches each of salt, garam masala, and chile powder

1 plum tomato, diced 
(I use a small can of diced or fresh whatever kind if I have them)
2 c. spinach, onions, veggie
1 can chickpeas

Over:
1-2 c. cooked brown rice


Pretty much everything else is either no recipe just toss together; or it’s pre-made/mix like falafel and soup. The mock chicken I’ll pour raspberry salad dressing over the cutlets and put it all in the oven. I looooooooove shortcut cooking!

Dinner - Couscous, Broccoli & Feta Salad

Friday:
Breakfast - Yogurt, Blueberries
Lunch - Blackbean & Cheese Quesadillas w/ guacamole & salsa
Dinner - Leftover Night

Saturday:
Breakfast - Whole Wheat Blueberry Pancakes, Banana
Lunch - Salad w/ lots of veggies, Grapes
Dinner - Breakfast for dinner (Veggie omelets, keilbasa sausage, hashbrowns)


Sunday:
Breakfast - French Toast, Strawberries
Lunch - Egg Salad sandwiches with Avocado & Tomato
Dinner - Broccoli & Cashew Chicken Stir-Fry

I did most of June, but its at home so I'll try to remember this week's:

1-pulled pork sandwiches, roasted potatoes
2-chef's salad, bread
3-dinner at my mom's
4-burritos
5-hamburgers, fries
6-steak bites, honeyed carrots, twice baked potatoes
7-fried potatoes & onions

I didn't plan the rest of the month because something usually comes up and a meal will get bumped. And fil's coming to visit at the end of the month and I have a hard time planning around him.

Breakfast this week is sausage, onion, egg, hashbrown & cheese casserole I made yesterday. Lunches are leftovers or sandwiches

Sat- we had grilled chicken salad
Sunday- we had turkey chili since it was chilly here for May 31st :
Monday- I made a pasta with goat cheese and asparagus
Tuesday- we are having grilled pork chops, mashed potatoes, veggie salad and some fruit
Wenesday- Crockpot falafels, quinoa and fruit salad
Thursday- burgers on the grill with fruit, salad and most likely baked french fries
Friday- homemade pizza

Leah- wife to Chris : SAHM to Henry (03/06)and to Evelyn : (06/08). She is our heart attack survivor at 3.5 weeks and went on to have open heart surgery at 5 weeks for Coarctation of the Aorta.

sunday: from-scratch chicken and parmisean cheese nuggets deep-fried in coconut oil, on top of mixed green, avocado, huntsman cheese and maple/spice-walnut salad, served with homemade honey-mustard sauce and a side of yukon and sweet potatoe fries.

monday: Vietnamese-style grilled mint meatball lettuce wraps with shredded carrot, cuckeumber, and brown rice topped with home-made peanut sauce.

tuesday: grilled (juicy and grass-fed!) top sirloin steak, grilled potatoes with onions, garlic and cumin, green beans with slivered almonds, butter and sesame seed salt.

wednesday: pork shoulder slow steaks slow roasted with apples and onions. side of sweet potatoe fries.

thursday: grass-fed beef hot dogs on whole wheat buns, sauteed kale fresh from the garden! and cantelope

friday: from the freezer italian pork sausage and pinto bean chili with cornbread.

ummm.... thats as far as i have gotten.

btw i love all the goat cheese ideas i am getting!

oh and quiches, i need to do those.

Just thought I'd say that I had reheated samosas (and leftover broccoli quinoa salad) for lunch. : I flash froze them, wrapped them in foil, then put them in freezer bags. I put 2 in the fridge this morning to slightly defrost. At lunchtime, I put them on a plate in the microwave for 1 minute. Then I did another 30 seconds. They were warm and tasty! Hoorah! New freezer item!

Sunday: Chickpea Curry and Vanilla Cake (we have guests tonight)

Tuesday: Red lentil Salad and Chicken Sausage/Veggie Hot Dogs
Wednesday: Asparagus Risotto
Thursday: Green salad with candied nuts and sourdough bread with yogurt dip

Saturday: Pasta Salad and Deviled Eggs (in the park)

I really have to start doing this by week instead of month, I move things around so much.

This week's plan got changed drastically since dh brought home salad, steak and pork chops from his weekend away and they need eaten soon. And my mom gave me a ton of organic lettuce and spinach.

Mon-grilled pork chops with sauteed onions, twice baked potatoes, salad
Tues-steak & onion sandwiches, roasted potatoes
Weds-dinner at my mom's
Thurs-pizza (for ds2's bday party)
Fri-pork chops & rice
Sat-steak bites, honeyed carrots, twice baked potatoes

I came across this great site a while ago and have tried a few recipes already, they're awesome! (I also have her 2 books!)

I'm just now getting into meal planning and I'm so excited.
It's unbelievable how much less food and money we waste when all of our meals are planned in advance.
I've stolen a lot of recipes from this thread and others around here.

Monday - homemade pasta sauce with hot Italian sausage

Thursday - chicken sloppy joes and salad

Thought I'd post next week's plan, along with a tale of how meal planning helps me! My grandmother was very ill last week so DS and I left town to go see her. (the drs said she had days to live, but they turned out to be wrong wrong wrong, she's now expected to recover and go home). I was able to do a very fast, very local groc shop for about 1/4 my usual shop and leave DH and DD with good, healthy, easy to make meals while I was gone. And then get us through the rest of the week from the pantry/freezer too. So it was much cheaper (good, since I spent bus and hotel costs on the trip) AND it was fast and easy and no stress. One less thing to worry about!

I think I'm going over this week though, between restocking freezer and party on Sunday. Oh well, it balances out in the end!

Anyway, for this week, here's my plan:
Saturday: Baby potatoes with cheese; Veggie corn dogs

Sunday: (Party after Pride at our place) Many different kinds of frozen pizza choices; party munchies; cheese; Chicken and veggie sausages. We always make pink lemonade; others bring the beer n' wine! : (And a surprise red velvet cake for DH for after everyone goes home, because it so happens that Sunday's our 12th anniversary!)

Monday: Gnocchi with leftover sausage, sweet potato, and parm

Tuesday: Mock chicken and asparagus stir fry

Wednesday: Veggie burgers and tomato-mozarella salad

Thursday: Black bean soup and quesadillas (crock pot; I'll be out all day!)

Friday: Cold soba noodles with tofu

Happy with my DH, 2 kids, dog, fish, and frogs

tonight we are having halibut and zucchini burritos with guac, salsa and spanish rice. and maybe black beans as well.

I'm a little late for this week but here are our dinner plans from the 28th to the 6th...

Sunday- Black Beans & Rice
Monday- Baked Mac Cheese & Tomato Casserole
Tuesday- Pancakes
Wednesday- Leftover Split Pea Soup with Toasted French Bread & Butter
Thursday- Buffalo or Beef burgers (haven't decided which), Corn on the Cob
Friday- Chicken Sandwiches with leftover buns
Saturday- 4th of July Picnic at my grandparents. Chicken sandwiches if we get hungry later
Sunday- Roman Lentil Soup, Toasted Sourdough bread and butter
Monday- Tuna Salad Sandwiches and leftover soup
