I like their milk, cheese, some produce, breads, and plain cereals. Produce can be hit or miss, but I love their frozen green beans and asparagus. I roast them with a little olive oil, pepper and salt.
Taco Salad (with beans, salad greens, salsa, shredded cheese and small handful of crushed chips or baked tortillas). I give DD a cheese and bean quesadilla with roasted vegetables.
Pea, Mushroom and Potato Gratin. Usually their fresh mushrooms and potatoes are cheap, and I just make a basic white sauce and add a little grated cheese and frozen peas.
2-3 Bean Chili. Their canned beans are usually a little cheaper than I'd find at our local grocery store, as are their canned tomatoes.
Some other things we make frequently are spinach pies or quiche, cheddar and onion pies, cheese and bean pies, twice baked potatoes, and quesadillas.
Our menus can tend to be heavy on the cheese/dairy, so I try to add just as much as necessary to give the right fats/protein and flavor.
We also make oatmeal with fresh or frozen fruit, waffles with fresh or frozen fruit, etc..
When money is tight, we try to rely more on frozen alternatives, but go for fresh when/where we can find it. I haven't seen much fresh fruit at our Aldi, so often have to go elsewhere.

Yes! I do about 80% of my shopping at ALDI (I get my raw milk, meat from a local farmer).
