I have a friend who tosses quinoa into a spinach, strawberry and avacado salad and it's really yummy topped with a fruit vinaigrette
I like to make a pan of quinoa and toss in some spinach, grilled chicken, mozzarella, and sun dried tomatoes for lunch.
My veggie cookbook has a recipe for "cheesy chickpea and quinoa bake"
1 T margarine/butter
1c coarsely chopped zucchini
1c chopped scallions
2c quinoa, rinsed and drained
1c canned chickpeas, rinsed and drained
1c shredded cheddar, divided
1/2c shredded swiss, divided
1/4c seasoned dry bread crumbs
preheat oven to 350 and coat a 2qt casserole with cooking spray
in a large frying pan over medium heat, melt the margaine/butter. add zucc., celery, and scallions. cook for 3-4m or until tender
stir in the water, quinoa, chickpeas, 3/4c the cheddar and 1/4c of swiss. Spoon into prepared casserole. Cover and bake for 45m or until the liquid has almost been absorbed.
Sprinkle with bread crumbs and remaining cheeses. Bake, uncovered, for another 15-20m or until the liquid has been absorbed and the cheese has melted.
I think I may make this in the next week. It sounds yummy, anyway.
